Snickerdoodle Cookie Topped Blueberry Doughnut Muffins

Grease a muffin pan, preheat the oven to 350 degrees F
- For the cinnamon-sugar:
- 1/4 cup (4 tbsp) sugar
- 2 tbsp cinnamon
- For the snickerdoodles:
- 1/4 cup (55g) butter
- 1/4 cup + 2 tbsp (75g) sugar
- 1/2 tsp cream of tartar
- 1/4 tsp baking soda
- 1/2 an egg (see notes)
- 3/4 cup + 2 tbsp (100g) all purpose flour
- For the muffins:
- 1/3 cup (66g) butter, melted
- 1/2 cup (100g) sugar
- 1/2 tsp salt
- 1/4 tsp ground nutmeg
- 1 1/2 tsp baking powder
- 1 1/2 cups (195g) all purpose flour
- 1 1/2 eggs (see notes)
- 1/4 cup + 2 tbsp (90ml) milk
- 1 cup (250ml) frozen blueberries
Thai Chicken and Mango Fried Rice

1. Add the florets of cauliflower to a food processor with the shredding attachment to rice the cauliflower
- 2 tablespoons duck fat (or other kind of fat)
- 1 head cauliflower, cut into florets
- 3 tablespoons coconut aminos (or gluten free soy sauce)
- 3 teaspoons sesame oil
- 2 teaspoons fish sauce
- 1 teaspoon sriracha
- 2 garlic cloves, minced
- 1 pound boneless, skinless chicken breasts, cubed
- 4 ounces button mushrooms, sliced
- 1 orange bell pepper, sliced
- 1 tablespoon minced jalapeño
- 1 teaspoon minced fresh ginger
- 1-2 cups mango, cubed
- 3-4 tablespoons green onions, diced
- cilantro, to garnish
- salt and pepper, to taste
- lime juice, to garnish
Roasted Garlic Red Pepper Pesto Tilapia

Ok let’s get set up and ready to go
- 1 lb tilapia
- 1/2 cup blanched almonds
- 1 bundle cilantro, stems removed
- 1/2 7oz jar of roasted red peppers
- 6-8 garlic cloves
- 2 zucchini, chopped
- 1 red onion, chopped
- 1 orange pepper, chopped
- 1 teaspoon paprika
- 2 teaspoons salt
- 2 teaspoons pepper
- 1/2 teaspoon onion powder
- roughly 7-8 tablespoons olive oil (I really have no idea because I just poured)

- 1/2 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon cinnamon
- 3/4 teaspoon salt
- 2 2/3 cups all-purpose flour
- 1/4 cup butter, softened
- 1/4 cup vegetable oil
- 1/3 cup light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup milk
- 1 1/3 cup fresh blueberries
- For the Glaze:
- 3 tablespoons butter, melted
- 1 cup confectioners’ sugar; sifted
- 1/2 teaspoon vanilla
- 1 tablespoon lemon juice
- 1 tablespoons hot water
