Foster's Market Blueberriest Muffins

1. Preheat oven to 375°F
- 3 cups all-purpose flour
- 1 cup white granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup (1 stick) unsalted butter, melted
- 3 large eggs
- 3/4 cup milk
- grated zest and juice of one lemon
- 2 1/2 cups fresh (or frozen) blueberries
Homemade Kind Breakfast Bars

Line an 8X8-baking pan with aluminum foil leaving a couple inches Overhanging on the sides
- 1 1/2 cup rice puff cereal
- 1/2 cup unsalted almonds
- 1/2 cup walnuts
- 1/2 cup pistachios
- 1/3 cup dried figs, chopped
- 1/3 cup dried mulberries, chopped
- 1/3 cup dried apricot, chopped
- 2 tablespoons Chia seeds
- 1/2 cup unsweetened coconut flakes
- 1/2 cup brown rice syrup
- 1/4 cup unsalted almond butter
- 2 tablespoons coconut sugar – Optional
- 1/4 teaspoon salt

Preheat oven to 300 degrees
- 1/3 cup pure honey (I prefer sage due to its mild flavor)
- 2 tablespoons coconut flour
- 1 tablespoon *all-natural almond butter
- 1/8 teaspoon sea salt
- 1 1/3 cups chopped whole *nuts
- 1/2 cup chopped dried fruit
- 1 cup unsweetened coconut flakes (not finely shredded coconut)
Ratatouille-Stuffed Zucchini Pizzas

1. Preheat the oven to 450 degrees
- 2 medium to large zucchini, halved lengthwise and seeds scraped out with a spoon
- Cooking spray
- Salt and pepper
- 1 eggplant, finely diced
- 3 tablespoons EVOO
- 1 onion, finely diced
- 3 - 4 large cloves garlic, chopped
- 1 roasted red pepper or small bell pepper, seeded and finely diced
- 2 tablespoons chopped fresh thyme
- 1/2 teaspoon crushed red pepper
- 1 cup drained canned diced Italian tomatoes
- 4 tablespoons grated parmigiano-reggiano cheese
- 1 lb ball fresh mozzarella cheese-patted dry, cut into quarters, then thinly sliced
- 4 cherry tomatoes, thinly sliced
- A few fresh basil leaves, torn

- 1 1/4 C all purpose flour
- 1/3 C sugar
- 1/3 C cocoa powder
- 2 tsp baking powder
- 1/4 tsp salt
- 3 Tbs butter, melted
- 1/2 tsp vanilla
- For glaze:
- 1 1/2 C powdered sugar
- 2-3 Tbs milk
- 1 Tbs butter, melted
- 1 tsp vanilla

Place starch and black pepper in a large Ziploc bag
- 1/4 C arrowroot starch
- 1/2 tsp pepper
- 2 lbs chicken thighs, cut into bite-size pieces
- 1 Tbsp coconut oil
- 3 Tbsp coconut aminos
- 2 Tbsp rice wine vinegar
- 2 Tbsp organic ketchup (or tomato paste)
- 1/2 - 1 Tbsp palm sugar
- 2 minced garlic cloves
- 1/2 tsp red pepper flakes
- 1/2 C raw cashews

- 2/3 cup old-fashioned rolled oats
- 2 tablespoons sugar

- 1/4 teaspoon salt
- 1 cup Greek yogurt
- 1 cup milk
- 4 tablespoons unsalted butter, melted
