Chocolate Waffles with Peanut Butter Sauce

Preheat waffle iron according to instructions
- 1 1/2 C flour
- 3 Tbs sugar
- 1/2 C cocoa powder
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp baking soda
- 3 eggs, beaten
- 2 Tbs vegetable oil
- 1 tsp vanilla
- 2 C buttermilk
- 1/2 C peanut butter
- 1 Tbs heavy cream or milk
Simple San Marzano Pasta e Fagioli

Remove the chicken from its casing
- 1 lb. chicken sausages in casing. GO SPICY if u dare.
- 1 1/2 cups mirepoix – chopped celery, carrot, and onion*
- 3 cloves garlic, minced
- 1 1/2 teaspoons ground oregano
- 1/2 teaspoon salt
- 1 bay leaf
- 1 28-ounce can San Marzano tomatoes
- 1 14-ounce can cannellini beans
- 28 ounces chicken broth
- 1 lb. small pasta – I used orchiette
- 8 ounces fresh baby spinach
- shaved Parmigiano Reggiano cheese for topping
Cornbread Dressing with Sausage and Fennel

Preheat oven to 300°. Divide cornbread between 2 large rimmed baking sheets
- 8 C 1/2” cubes Easy Savory Cornbread (click for recipe)
- 1 lb bulk breakfast sausage or links, casings removed
- 10 Tbsp (1 1/4 sticks) unsalted butter, divided, plus more for baking dish
- 1 medium fennel bulb, chopped, plus fronds for serving
- 4 celery stalks, chopped
- 8 scallions, white and pale-green parts only, thinly sliced
- 2 garlic cloves, finely chopped
- 2 Bosc or Comice pears, peeled, chopped
- 1/2 C dry white wine (such as Sauvignon Blanc)
- 2 Tbsp finely chopped fresh flat-leaf parsley
- 1 Tbsp chopped fresh marjoram or oregano
- 1 Tbsp chopped fresh thyme
- 1 tsp dried sage leaves
- 2 C (or more) low-sodium chicken broth, divided
- Kosher salt and freshly ground black pepper
- 3 large eggs, beaten to blend

1. combine the flour, salt, baking soda, and cocoa powder {set aside} 2
- 1/2 cup AP flour
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1 egg
- 1 egg white
- 1 cup of sugar
- 1 tsp vanilla
- 2 TBSP cocoa powder
- 1 cup of chopped dark chocolate {or chocolate chips} I used a combination of 70% and 75% cocoa
- 1/4 cup of butter
- 1/2 cup of heath toffee bits
Easy Healthier Crockpot Butter Chicken

1. In a large glass measuring cup or bowl mix together the coconut milk, greek yogurt and cream
- 1 pound boneless skinless chicken breast, cut into bite size chunks
- 1/2 onion, finely minced
- 2 tablespoons butter
- 3 cloves garlic, minced or grated
- 1 tablespoon freshly grated ginger
- 2 teaspoons curry powder
- 1-2 teaspoons curry paste ( I used Thai Red Curry Paste and 2 teaspoons)
- 2 tablespoons garam masala
- 1/2-1 teaspoon turmeric ( I used 1/2 since my family is not crazy about turmeric)
- 1 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 1 (6 ounce) can tomato paste
- 1 (14 ounce) can coconut milk, regular or lite (I used regular), plus more if needed to thin the sauce
- 1/2 cup greek yogurt (I used 0%)
- 1/4 cup half and half or heavy cream
- cooked white rice, for serving
- Fresh homemade Naan , for scooping (a must!)
Oven-Fried Chicken Drumsticks Recipe

In a large resealable plastic bag, combine yogurt, mustard and garlic
- 1 C fat-free plain Greek yogurt
- 1 Tbs Dijon mustard
- 2 garlic cloves, minced
- 8 chicken drumsticks (4 oz each), skin removed
- 1/2 C whole wheat flour
- 1-1/2 tsp paprika
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp pepper
- Olive oil-flavored cooking spray

- 1/4 cup honey (or sub maple syrup or agave for vegan option)

To caramelize the onions: heat the oil in a large non-stick skillet over medium-high heat
- Caramelized Onions:
- 3 tsp olive oil
- 2 yellow onions, chopped
- 1 clove garlic, minced
- 1/4 tsp salt
- 1-2 Tbs water
- Dip:
- 16 oz plain Greek yogurt
- 1/4 C mayo, optional
- 10 oz frozen chopped spinach, thawed and drained
- 1 can water chestnuts, chopped
- 1 package vegetable dip mix
- 1/2 C parmesan cheese
- 1/4 C mozzarella
- 1/8 tsp cayenne
- 1/2 tsp pepper
- 1/4 tsp salt
Chicken Enchilada Pasta Bake

Heat oven to 350 degrees. Cook pasta al dente according to package instructions
- 1 lb. dried pasta (I used large shells)
- 1 Tbsp. olive oil
- 1 small white onion, diced
- 1 (4 oz.) can diced green chiles
- 3 cups enchilada sauce, homemade or store-bought (about two 10-ounce cans store-bought)
- 3 cups shredded cooked chicken
- 1 (15 oz.) can black beans, rinsed and drained
- 1 (15 oz.) can whole-kernel corn, drained
- 2.5 cups shredded Monterrey Jack or Mexican-blend cheese
- optional toppings: diced avocado, fresh cilantro, sour cream
