Single Serve Apple Pie

Take pie crust out of the freezer to thaw as you prepare the apples
- 8 small apples
- 1/4 cup brown sugar
- 3 tablespoons butter
- 1/4 cup raisins
- 1 teaspoon cinnamon
- 1 packaged pie crust, thawed
Buttery Crab Pot Pies

- 8 tablespoons (1 stick) butter
- 1 small yellow onion, chopped
- 1 cup sliced mushrooms
- Salt and cracked black pepper
- 2 tablespoons all-purpose flour, plus more for dusting
- 1 1/2 cups milk
- 1/4 cup clam juice
- 1/4 cup medium-dry sherry
- 1/2 pound crabmeat, well drained and picked clean of shells
- 1 cup frozen peas
- 2 sheets frozen puff pastry, thawed
- 1 egg, beaten with 1 teaspoon water, to brush pastry
Old School Sweet Potato Souffle

- Butter, for casserole
- 3 pounds sweet potatoes, peeled and cubed
- Salt
- 1 (4.5-ounce) can evaporated milk
- 1/2 cup brown sugar
- 5 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 2 eggs, beaten
- Freshly ground black pepper
- 1 cup coarsely chopped roasted, salted cashews
- 1/2 cup mini marshmallows
- 1/2 cup sweetened shredded coconut
Barcelona Potatoes

Peel and cut the potatoes into 1/2-inch cubes
- 3 large russet potatoes
- 2 cups canola oil
- 1 teaspoon salt
Baked Crab Rangoon

HEAT oven to 350°F. MIX first 4 ingredients
- 1 can (6 oz.) white crabmeat, drained, flaked
- 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, softened
- 2 green onions, thinly sliced
- 1/4 cup KRAFT Light Mayo Reduced Fat Mayonnaise
- 12 won ton wrappers
Garlic Mashed Cauliflower

Fill a large stock pot with an inch or two of water and bring to a boil
- 1 lg head of cauliflower
- 3-4 cloves of garlic
- Salt & pepper
Beef Enchiladas with Mole Sauce

Preheat the oven to 350 degrees
- Mole Sauce:
- 1/2 c. chicken broth
- 1 14oz can diced tomatoes
- 1 4oz can mild gr chiles
- 1 oz semi-sweet chocolate chips
- 1 tsp sugar
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp pepper
- Enchiladas:
- 1 onion, finely chopped
- 1 lb ground beef
- 8 8” tortillas
- 1/2 c. shredded cheddar cheese
- 1/2 c. shredded mozzarella
Beef-Barley Skillet

Sauté beef, onion, celery, pepper
- 1 lb ground beef
- 1 chopped onion
- 1 chopped celery rib
- 1/2 chopped gr pepper
- Salt & pepper to taste
- 1/2 tsp marjoram
- 1 tsp sugar
- 1 tsp Worcestershire sauce
- 1/2 c. chili sauce
- 1 14oz can diced tomatoes
- 1 1/2 c. water
- 3/4 c. pearl barley

- DRESSING:
- 8 ounces package mixed greens, washed
- 1 fresh pear, thinly sliced
- 1/2 cup honey roasted sliced almonds
- 4 ounces feta cheese (tomato basil or flavor of your choice)
- 1/2 cup dried cranberries
- 1 1/2 tablespoons white wine vinegar
- 1 1/2 teaspoons Dijon mustard
- 3 tablespoons olive oil
- salt and pepper to taste
Maple-Dijon Chicken

- 1 tbs rice vinegar
- 2 tsp chopped fresh basil leaves
