Squash Medley

Heat butter in skillet on medium high for 2 minutes
- 1 tbs butter
- 1 tbs oil
- 1 med onion, sliced
- 1 lg zucchini, sliced
- 2 med yellow squash, sliced
- 1 med green pepper cut in strips
- 3 med tomatoes, chopped
- 1 tsp dried basil
- 1 tsp salt
- Pinch of pepper
- 1 c. grated parmesan cheese
Black-eye Peas

In a 5 quart Dutch oven, cook onion, celery and garlic in oil until tender; add broth, salt, pepper and peas
- 4 c. fresh or frozen black-eyed peas
- 1 tbs olive oil
- 1 lg onion, chopped
- 1 stalk celery, diced
- 4 garlic cloves, minced
- 6 c. chicken broth
- 1/2 tsp salt
- 1/4 tsp ground black pepper
Fruit Salad

Mix ingredients and chill before serving
- 1 can fruit cocktail, drained
- 1 apple
- 1 can pineapple chunks, drained
- 1 can mandarin oranges, drained
- 1/2 c. sliced red or green grapes
- 1/2 c. coconut
- 1/2 c. chopped nuts
- 1 sliced banana
- 2 tbs lemon juice
Beefy Cabbage Casserole

Brown ground beef with onions and garlic
- 1 lb ground beef
- 1 chopped onion
- 1 clove minced garlic
- 1/2 tsp thyme
- Salt &pepper to taste
- 1/2 head sliced cabbage
- 2 tbs butter
- 2 tbs flour
- 2 c. milk
- 1 c. bread crumbs
Carrot Salad

Combine first 4 ingredients and set aside
- 1/4 c. oil
- 2 tbs lemon juice
- 1 tsp Dijon mustard
- 1 tsp sugar
- 10 oz shredded carrots
- 1/2 c. craisins
- 1/2 c. toasted slivered almonds
- 8 oz pineapple chunks
Chicken Cacciatore

Combine all ingredients in crock pot
- 2 lb boneless, skinless chicken breast
- 1/2 lb fresh mushrooms
- 1 gr pepper, chopped
- 1 onion, chopped
- 2 c. fresh diced tomatoes
- 6oz can tomato paste
- 12oz can tomato sauce
- 1/2 tsp oregano
- 1 tsp fresh basil
- 1/2 tsp garlic powder
- 1/2 tsp salt & pepper
Smothered Steak

Layer the steak in bottom of crock pot
- 1 lb round steak cut in strips
- 1/3 c. flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 lg onion, sliced
- 1 lg gr. pepper, sliced
- 14 oz can diced tomatoes
- 4 oz can mushrooms
- 2 tbs soy sauce
Apple Grape Walnut Salad

Combine fruit and nuts. Mix yogurt with sour cream together until smooth then mix with fruit and nuts
- 3 apples
- 2 c. grapes, halved
- 1/2 c. chopped walnuts
- 8 oz vanilla yogurt
- 3 oz cream cheese
Pork Tenderloin Dinner

Place potatoes and carrots in bottom crock-pot
- 1 lb sm red potatoes cut in half
- 16 oz bag baby carrots
- 3 lb boneless pork tenderloin
- 1/2 c. Dijon mustard
- 1/2 tsp dried marjoram
- 1/2 tsp basil
- Salt & pepper
- 1 onion chopped
- 2 clove garlic, minced
- 1 1/2 c. beef broth
Indian Vegetable Stew

In large saucepan melt butter and add the oil
- 1/2 tbs butter
- 1 tbs oil
- 2 minced garlic clove
- 2 sliced gr onions
- 1 1/2 tbs minced fresh ginger
- 1 tsp cumin
- 1/2 tsp coriander
- 1/4 tsp ground cloves
- 1/2 tsp ground cardamon
- 1/4 tsp dry mustard
- 1/2 tsp ground turmeric
- 1/2 cinnamon stick
- 1 tsp salt
- 3 c. chicken broth
- 3 tbs lime juice
- 1 tbs honey
- 3 sliced carrots
- 1 1/2 c. sliced mushrooms
- 2 c. cauliflower florets
- 1 med diced potato
- 1 c. broccoli cole slaw mix
