In a sauce pan sauté shallot and garlic in two tablespoons of butter
- 1 c. cornmeal
- 4 c. chicken broth
- 1 clove garlic, minced
- 1 shallot, chopped
- 4 tbs butter
- 3/4 c. cream
- 1 c. white cheddar cheese
Cranberry Chicken Couscous

Combine dried cranberries, curry powder and chicken broth
- 1/2 c. dried cranberries
- 1 tsp curry powder
- 2 c. chicken broth
- 1 c. couscous
- 2 (16oz) grilled chicken breast, cubed
- 1/4 c. pine nuts
- 4 tbs chopped parsley
Mushroom Salad

Combine ingredients and toss with dressing
- 1/2 red onion, thinly sliced
- 2 hardboiled eggs, sliced
- 6 oz sliced mushrooms
- 8 oz romaine lettuce, torn into pieces
- 6 oz spinach

Basil Pesto

Combine the basil, garlic, and pine nuts in a food processor and pulse until coarsely chopped
- 2 cups packed fresh basil leaves
- 2 cloves garlic
- 1/4 cup pine nuts
- 2/3 cup extra-virgin olive oil, divided
- Kosher salt and black pepper, to taste
- 1/2 cup freshly grated Parmesan cheese
Creole Pork Chops

- 4 1" thick pork chops
- salt & pepper
- garlic powder
- 1 tbs oil
- 1 chopped onion
- 1 thinly sliced gr pepper
- 1/2 c. chopped celery
- 2 tbs chopped parsley
- 1 14oz can stewed tomatoes
- 1/2 c. water
- hot cooked rice
Garlic Broccoli with Cranberries

- 1 tbs olive oil
- 3 minced garlic cloves
- 4 c. broccoli florets
- 1/2 c. craisins
- 1/4 c. chicken broth
- Salt and pepper to taste
Best Turnips

- 2 lb fresh turnips
- 1 fresh apple (opt)
- 2 tbs butter
- 1 tbs sugar
- Salt and pepper to taste
Charred Green Beans

Toss green beans on a baking sheet with smashed garlic cloves, water and olive oil
- 1 lb fresh green beans
- 6 smashed cloves garlic
- 1/4 c. water
- 1 tbs olive oil
- 2 tsp of tarragon, & whole grain mustard

- 1 lime, juiced
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon cayenne
- 1/2 medium onion, diced
- 2 Roma tomatoes, seeded and diced
- 1 tablespoon chopped cilantro
- 1 clove garlic, minced
Hot Chile Grilled Pork Rounds with Avocado-Mango Salsa over Couscous

In a medium bowl, combine mango, avocado, onion, lime juice, cilantro, jalapeno, and cumin
- 1 cup diced ripe mango
- 1 cup diced ripe California avocado
- 2 tablespoons minced red onion
- 2 tablespoons fresh lime juice
- 2 tablespoons freshly chopped cilantro leaves
- 1 tablespoon finely chopped and seeded jalapeno pepper
- 1/4 teaspoon ground cumin
- Salt and freshly ground black pepper
- 2 cups reduced-sodium chicken broth
- 1 (10-ounce) box couscous
- 12 ounces cooked sliced pork tenderloin rounds (1/2-inch thick rounds)
