Zucchini Lasagna

In a medium sauce pan, brown meat, onions and garlic
- 1 llb ground beef
- 1 1/2 tsp salt
- 1 tsp olive oil
- 1/2 large onion, chopped
- 3 cloves garlic, minced
- 1 28 oz crushed tomatoes
- 2 Tbs chopped fresh basil
- pepper, to taste
- 3 medium (8 ounces each) zucchini, sliced 1/8″ thick
- 1 1/2 cups part-skim ricotta
- 1/4 cup Parmigiano Reggiano
- 1 large egg
- 4 cups shredded mozzarella cheese
Oriental Cole Slaw

For dressing: combine sugar, vinegar, and sugar mix until sugar is completely dissolved
- 1/4 c. mayonnaise
- 4 tbs rice wine vinegar
- 2 tbs sugar
- 2 tbs sesame oil
- 1 tsp toasted sesame oil
- 1 tsp Dijon mustard
- 1 bag cole slaw min
- 1 bunch gr onions
- 1/2 c. sunflower seeds
- 1/2 c. slivered almonds
Italian Chicken Sticks

Preheat oven to 400 degrees F
- 1 c. seasoned bread crumbs
- ½ c. freshly grated parmesan
- 1 ½ tsp dried thyme
- 1 ½ tsp dried basil
- ½ tsp dried oregano
- ½ tsp salt
- ½ tsp garlic powder
- 8 boneless chicken breast halves, cut into 1/2” strips
- 1 stick melted butter
- Marinara sauce or honey mustard for dipping
Homemade Granola

Preheat oven to 300 degrees F
- 4 cups old-fashioned oats
- 1/2 cup packed light brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 cup vegetable oil
- 1/4 cup honey
- 1 teaspoon vanilla
- 1 1/2 cup raisins or dried cranberries (optional)
Beef Burgundy

Coat the beef with flour and brown on all sides in bacon fat or oil
- 2 lb beef tips cut into 1 inch cubes
- 1/4 c. flour
- Bacon fat or oil
- 1/2 tsp salt
- 1/2 tsp season salt
- 1/2 tsp marjoram
- 1/2 tsp pepper
- 2 cloves minced garlic
- 1 beef bouillon cube crushed
- 1 c. Burgundy wine
- 1 c. beef broth
- 8 oz sliced mushrooms
- 2 tbs cornstarch
- Cooked wide noodles
Mint and Parsley Zucchini

Heat a large skillet over medium heat
- 4 zucchini
- 3 tbs olive oil
- 3 minced garlic cloves
- 1/4 c. chopped fresh mint
- 1/2 c. chopped fresh parsley
- Salt and pepper to taste
Herbed Bulgur-Lentil Pilaf

Place lentils and 2 cups broth in a small saucepan and bring to a boil
- 1/2 cup green lentils
- 1 cup bulgur
- 4 cups low-sodium chicken broth
- 1 tablespoons plus 2 teaspoons olive oil
- 1 small red onion, finely diced (1 cup)
- 1 yellow pepper, seeded and finely diced
- 3 tablespoons chopped fresh flat-leaf parsley
- 2 tablespoons chopped fresh basil leaves
- 2 tablespoons chopped fresh chives
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Crock Pot Stew

Combine all ingredients in crock pot and cook on low for 8 hours
- 2 lb boneless beef or beef brisket cubed
- 6 celery ribs, sliced
- 6 carrots, sliced
- 6 potatoes, cubed
- 2 onions, sliced
- 28 oz can tomatoes
- 1/4 c. minute tapioca
- 1 tsp salt
- 1/4 tsp pepper
- 1/2 tsp basil
- 1 clove garlic, minced

- 1 chicken bouillon cube
- 4 Tbs. extra-virgin olive oil, divided
- 1 eggplants (about 3/4 lb. total), diced
- 1 chopped onion
- 1 chopped carrot
- 1 chopped gr pepper
- 3 tbs. tomato paste
- 1 1/2 c. chicken broth
- 1 generous handful of basil leaves, chopped
- salt & pepper to taste
Sautéed Squash and Tomatoes

Sauté onion, basil, oregano, and squash in drippings for 10 minutes
- 1 tbs bacon drippings
- 1 onion chopped
- 1 cloves garlic minced
- 1 tbs fresh minced basil
- 1/2 tsp dried oregano
- 2 c. sliced zucchini
- 2 c. sliced yellow squash
- 1/2 c. sliced mushrooms, opt
- 1 c. chopped tomatoes
- Salt & pepper to taste
