Baked Cornish Game Hens

Preheat oven to 425 degrees
- 1 lg onion sliced
- 2 Cornish hens
- 2 tbs. melted butter
- 3 c. cooked rice
- 2 chopped tomatoes
- 1/2 c. chopped red onion
- 1/2 c. chopped celery
- 1 chopped bell pepper
- 4 oz chopped mushrooms
- 1/2 c. shredded carrots
- 1/4 c. chopped fresh parsley
- 1 diced apple
- Olive oil
- Salt & pepper
Costa Vista Chicken

Cook all together in a crock pot on low for 4 hours
- 1-16 ounce bottle of Italian dressing
- 1 Tablespoon Chili powder
- 1 Tablespoon Cumin
- 3 cloves of minced garlic
- 5 boneless, skinless chicken breasts
Red Cabbage Slaw

Combine mayonnaise, sugar, and vinegar; set aside
- 3/4 c. mayonnaise
- 3 tbs sugar
- 2 tbs cider vinegar
- 1 pkg chopped red cabbage
- 1 thinly sliced onion
- 3/4 c. golden raisins
- 1/2 c. chopped pecans
Tuna Salad

Mix together and serve
- 1 can tuna
- 1/2 apple chopped
- 2 boiled eggs, chopped
- 2-3 tbs mayonnaise
Zucchini Canoes

Trim both ends off zucchini; cut in half lengthwise
- 2 medium 2-inch-wide zucchini
- 1/2 teaspoon salt, divided
- 1/2 teaspoon freshly ground pepper, divided
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon white-wine vinegar
- 1 tablespoon minced shallot
- 1 cup quartered grape tomatoes
- 1/2 cup diced mozzarella cheese, preferably fresh
- 1/4 cup thinly sliced fresh basil
Spanish Tortilla

In a large bowl beat together the eggs and the milk
- Topping:
- 5 eggs
- 1/2 cup milk
- 1 cup potatoes, reserved from Barcelona Potatoes recipe, chopped
- Salt and fresh ground black pepper
- 1 tablespoon canola oil
- 2 plum tomatoes, diced
- 2 tablespoons chopped fresh basil leaves
- 1 tablespoon olive oil
- Pinch salt and fresh ground black pepper
Chicken Salad

For a lowfat menu serve with corn on cob and zucchini muffins
- Salad:
- 2 c. diced cooked chicken
- 2 c. chopped celery
- 2 c. chopped pineapple
- 1 c. seedless grapes, sliced
- 1/4 c. slivered almonds
- Dressing:
- 1/4 c. plain yogurt
- 1/4 c. sour cream
- 2 tsp lemon juice
- 1 tsp honey

Simple Scones

1.Adjust oven rack to lower-middle position and preheat oven to 400 degrees
- 2 cups all-purpose flour
- 1/3 cup sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 8 tablespoons unsalted butter, frozen
- 1/2 cup raisins (or dried currants)
- 1/2 cup sour cream
- 1 large egg
Steamed Asparagus

Set up a steamer, fill the bottom with water and bring to a boil
- 1 bunch asparagus
- Salt and pepper

- 1 can (20 oz.) DOLE Crushed Pineapple, in juice, undrained
- 1 pkg. (1.5 oz.) JELL-O Vanilla Flavor Fat Free Sugar Free Instant Pudding
- 1 cup thawed COOL WHIP LITE or COOL WHIP Sugar Free Whipped Topping
- 1 pkg. (10 oz.) round angel food cake, cut horizontally into 3 layers
- 10 fresh strawberries
