Black Eyed Pea Soup with Eggplant

In a large soup pot, heat the oil
- 1 chopped onion
- 1 chopped gr pepper
- 1 eggplant cubed
- 1 tbs olive oil
- 3 c. cooked black-eyed peas
- 3 c. c vegetable or chicken broth
- 3 8oz cans tomato sauce
- 1 tsp basil
- 1 tsp marjoram
- 1 tsp nutmeg
- 1 tsp salt
Veggie Chili

Heat the oil in a skillet and sauté the onion
- 1 tbs oil
- 1 onion, chopped
- 1 carrot, sliced
- 1 gr bell pepper, chopped
- 8 oz sliced mushrooms
- 1 zucchini, cubed
- 4 garlic cloves, minced
- 28 oz diced tomatoes
- 2 c. tomato sauce
- 4oz can chopped gr chilies
- 2 15oz cans kidney beans
- 1 tbs chili powder
- 2 tsp dried oregano
- 1 tbs cumin
- 1 tbs red wine vinegar
Buttermilk Oven-Fried Chicken with Coleslaw

1. To prepare coleslaw, combine first 6 ingredients; toss to coat
- Coleslaw:
- 4 cups packaged cabbage-and-carrot coleslaw
- 3 tablespoons fat-free mayonnaise
- 1 1/2 teaspoons sugar
- 1/2 teaspoon celery seeds
- 1 1/2 teaspoons cider vinegar
- 1/8 teaspoon salt
- Chicken:
- 1 cup low-fat buttermilk
- 4 (8-ounce) bone-in chicken breast halves, skinned
- 1/3 cup all-purpose flour
- 1/3 cup cracker meal
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons butter

Salsa Rice with Black Beans and Corn

In a medium sauce pot, cook rice according to package instructions
- 1 cup rice, regular or instant
- 1/2 (14-ounce) can black beans, drained
- 1/2 cup prepared salsa
- 1/2 cup frozen corn, thawed
- 2 tablespoons chopped fresh cilantro leaves
- Salt and freshly ground black pepper
Overnight Slaw

Put cole slaw mix and onions in a bowl
- 1 pkg cole slaw mix
- 1 onion sliced
- 1 c. vinegar
- 3/4 c. oil
- 3 tbs sugar
- 1 tbs dry mustard
- Salt & pepper to taste
- 1 tbs celery seeds
Black Bean Cakes With Salsa

In colander, drain 1/2 cup of the salsa
- 1-1/2 cups prepared salsa
- 1 jalapeño pepper
- 2 15-oz. cans black beans, rinsed and drained
- 1 8.5-oz. pkg. corn muffin mix
- 2-1/2 tsp. chili powder
- 2 Tbsp. olive oil
- 1/2 cup sour cream
- 1/2 tsp. chili powder
Cheese Steak Egg Rolls with Ranch Pepper Rings

Preheat oven to 400 degrees F
- 1 cup sliced onions
- 2 cooked fillet or rib-eye steaks, cut into thin slices
- 8 spring roll wrappers
- 6 to 8 ounces provolone cheese
- 2 large yellow or red bell peppers, sliced crosswise into rounds
- 1 packet dry ranch dip mix
Southwest Chicken Bake

HEAT oven to 375ºF. ADD seasoning mix to chicken in medium bowl; toss to evenly coat
- 2-1/2 Tbsp. (1/2 of 1-1/4-oz. pkg.) TACO BELL® HOME ORIGINALS® Taco Seasoning Mix
- 1 lb. boneless skinless chicken thighs, cut into bite-size pieces
- 2 Tbsp. KRAFT Light Zesty Italian Dressing
- 1 cup canned no-salt-added black beans, rinsed
- 1/2 cup frozen corn
- 2 green onions, chopped
- 1 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
- 1/2 cup KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese
- 2-2/3 cups hot cooked long-grain brown rice
Garlic Herb Bread

- 4 to 6 slices sourdough bread, at least 1 slice per person

- Garlic salt
- Fines herbes (equal parts dried parsley, chervil, chives and tarragon, mixed well)
Grilled Vegetables

- 3 zucchini
- 1 red bell pepper
- 1 yellow bell pepper
- 1 onion
- 12 oz halved mushrooms
- 1/2 ½ cup butter, melted
- 1 1/2 1 ½ tsp fresh chives, chopped
- 1 1/2 1 ½ tsp fresh dill weed, chopped
- 1/4 ¼ tsp garlic salt
- 1/4 ¼ tsp lemon juice
