Spinach & Orange Salad

Toss together in a bowl and toss with some orange juice, lemon juice and teaspoon of olive oil
- 2 c. fresh spinach leaves
- 2 c. leaf lettuce
- 1/2 c. shredded jicama
- 1 sm can mandarin oranges, reserve juice
- 2 tbs chopped pecans
Beer Biscuits

Preheat oven to 450 degrees F
- 2 c. all purpose flour
- 3 tsp baking powder
- 1 tsp salt
- 1/4 c. shortening
- 3/4 c. beer
Easy Lasagna

In a large skillet over medium heat brown the ground beef and drain
- 1 lb ground beef
- 1 32oz jar spaghetti sauce
- 1 32oz carton cottage cheese
- 3 c. shredded mozzarella cheese
- 2 eggs
- 1/2 c. grated Parmesan cheese
- 2 tsp parsley
- Salt and pepper to taste
- 9 lasagna noodles
- 1/2 c. water
Green Beans Provencal

Sauté the onion in oil. Add remaining ingredients except tomato

- 1 tbs olive oil
- 1 lb fresh green beans, trimmed and cut
- 1/2 c. water

- 1/2 tsp garlic powder

- 1 lb lean ground beef
- 1 cup cooked rice
- 1 can tomatoes
- 1/2 t italian seasoning
- 1 t worcestershire sauce
- 2 T ketchup
- 1 t black pepper
- 1/3 cup water
- Enough peppers to fit your crockpot. I have a 6qt oval Smart Pot, and six nestled perfectly in the stoneware
Shrimp and Grits

In a heavy-bottomed saucepan, bring the chicken stock, and whipping cream up to a low simmer
- Grits:
- 4 c. chicken broth
- 1/2 whipping cream
- 1 c. quick cooking grits
- Salt and pepper
- 1 tbs butter
- 1/4 cup Parmesan
- Shrimp:
- 2 tbs butter
- 1/2 med onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1/2 lb smoked kielbasa (polish) sausage, sliced
- 2 lb uncooked large shrimp, peeled and deveined
- 1/4 c. dry white wine
- 1 14.5oz can diced tomatoes
- Chopped chives, for garnish
Chicken and Sausage Gumbo

Combine chicken, the onion chunks, celery leaves, and salt in a Dutch oven or large kettle; add water to cover
- 3 1/2 pounds frying chicken
- 1 onion, cut in chunks
- celery leaves
- 1 teaspoon salt
- 5 cups reserved broth
- 6 slices bacon, diced
- 1 pound smoked andouille or smoked sausage, sliced 1/4" thick
- 1 1/2 cups chopped onion
- 2 green bell peppers, chopped
- 2 celery ribs, chopped
- 3 cloves garlic, minced
- 3 tomatoes, peeled and chopped, or 1 (14.5 ounces) can diced tomatoes
- 1 can (approx. 15 ounces) tomato puree
- 1 package (10 ounces) frozen corn kernels, thawed
- 1 package (10 ounces) frozen sliced okra, thawed
- 1 tablespoon fresh chopped thyme or 1 teaspoon dried leaf thyme

- 1- 8oz pkg cream cheese
- 1 tsp onion powder
- 2 tbs minced chives
- 1 -15oz container ricotta cheese
- 1/3 c. chopped fresh basil
- 1 tsp salt
- 5 sliced zucchini about 2 1/2 lb
- 2 tbs oil
- 1-10oz pkg fresh spinach
- 2 minced garlic cloves
- 6 no-boil lasagna noodles
- 2 c. shredded mozzarella cheese

- 1 lg onion cliced
- 6 med carrots, sliced
- 4 med potatoes sliced

- 2 c. green peas or corn
Stuffed Green Sweet Peppers

- 4 lg gr. sweet peppers
- 1 15oz can black beans, drained & rinsed
- 1 8oz can whole kernel corn, drained
- 1 med onion, chopped
- 1/3 c. rice
- 1/4 tsp salt
- 2 tbs chopped cilantro
- 3/4 c. shredded Monterey Jack cheese
