Brunswick Stew

Heat a large Dutch oven over medium-high heat
- 1 chopped red bell pepper
- 1 chopped onion
- 2 cloves minced garlic
- 1 chopped celery rib
- 1 tbs oil
- 1 tbs flour
- 1 lb chicken 1/2 inch chicken pieces
- 2 c. chicken broth
- 6 oz tomato paste
- 1/2 tsp salt
- 10 oz frozen corn, thawed
- 10 oz frozen baby lima beans, thawed
- 3 c. cubed potatoes
- 1 can diced tomatoes
- 10 oz frozen okra
- Sliced garlic bread (opt)
- 2 cloves garlic cut in half (opt)
Perfect Mashed Potatoes

Peel the potatoes, wash them and cut them into pieces
- 1 1/2 lbs Yukon potatoes
- 1/2 tsp salt
- 1/4 c. evaporated milk
- 2 tbs butter
- 1 tbs milk
- salt and pepper to taste
Roman-style Chicken

- 4 skinless chicken breast halves, with ribs
- 2 skinless chicken thighs, with bones
- 1/2 teaspoon salt, plus 1 teaspoon
- 1/2 teaspoon freshly ground black pepper, plus 1 teaspoon
- 1/4 cup olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 ounces prosciutto, chopped
- 2 cloves garlic, chopped
- 1 (15-ounce) can diced tomatoes
- 1/2 cup white wine
- 1 tablespoon fresh thyme leaves
- 1 teaspoon fresh oregano leaves
- 1/2 cup chicken stock
- 2 tablespoons capers
- 1/4 cup chopped fresh flat-leaf parsley leaves
Steamed Green Beans

Place beans in steamer basket over boiling water for 2 minutes
- Fresh gr. beans - desired amount & cut
- 1 c. water
- Butter (opt)
- Salt & pepper to taste
Chili Stuffed Potatoes

Preheat oven 400 degrees F
- 1 med. baking potatoes per person
- Leftover chili from meal 1
- Shredded cheese
- Sour cream
- Chives
Crockpot General Tso’s Chicken

In a mixing bowl mix together water, hoisin sauce, soy sauce, brown sugar, ketchup and ginger
- 4 boneless, skinless chicken breasts
- 1/2 c. water
- 3 tbs hoisin sauce
- 2 tbs soy sauce
- 1/2 c. br. sugar
- 3 tbs ketchup
- 1/4 tsp dry ginger
- 1 tbs cornstarch
- Toasted sesame seeds(opt)
Roasted Broccoli

Method Preheat the oven to 425°F
- 1 head broccoli florets
- 3 tbs olive oil
- salt
- 2 minced garlic cloves
- black pepper
- grated Parmesan cheese to taste
Cauliflower and Brussels Sprout Gratin

Preheat the oven to 375 degrees F
- 3/4 head of cauliflower, cut into large florets
- 3/4 lb of brussels sprouts, trimmed, and quartered lengthwise through core
- 1 teaspoon of kosher salt
- 4 tablespoons (1/2 stick) unsalted butter, divided
- 3 tablespoons all-purpose flour
- 2 cups hot milk
- 1/2 teaspoon freshly ground black pepper
- a pinch of grated nutmeg
- 3/4 cup grated Gruyere cheese, divided
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh bread crumbs
Apple Nut Tossed Salad

In a bowl, combine oil, mustard, sugar, salt and pepper
- 3 tbs olive oil
- 1 tsp Dijon mustard
- 1/4 tsp sugar
- Salt & pepper to taste
- 1/2 c. chopped apple
- 1 tbs chopped gr. onion
- 4 c. torn lettuce
- 2 tbs chopped walnuts
- 1 tbs crumbled blue cheese
