Deep Dish Pizza Cupcakes

We had these for lunch today & they're good
- 1 can regular or light crescent rolls
- 1/2 cup pizza sauce
- 1 cup shredded mozzarella cheese
- Pizza toppings - pepperoni, ham, sausage, peppers, onions, mushrooms, etc.
- 1/2 tsp garlic powder
Chicken Scaloppine

- 1 TB olive oil
- 1/3 cup Italian-seasoned breadcrumbs
- 1/4 tsp black pepper
- 4 - 5 chicken cutlets
- 1/2 cup dry white wine
- 1/2 cup low-sodium chicken broth or stock
- 3 TB fresh lemon juice
- 1 tsp butter
Cream Cheese Sausage Balls

Preheat oven to 375. Line a rimmed baking sheet with foil & set aside
- 1 lb. ground pork sausage
- 8 oz. cream cheese
- 2 cups shredded sharp cheddar cheese
- 2 ¼ cups Bisquick
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp rubbed sage or ¼ tsp dried sage
- 2 tsp dried parsley
- 3 TB milk
Mushroom Rice

Recipe Tin Eats, modified ~ I didn’t use the green onions
- 2-3 TB olive oil, divided
- 2 TB butter
- 1 lb. sliced baby bella mushrooms
- 2 garlic cloves, minced
- 1 small onion, chopped
- 1 1/2 cups long grain white rice
- 2 1/4 cups vegetable broth or stock
- 1/2 cup sliced green onions, optional
- More butter to stir through at the end, optional
Fish Almondine

Heat oven to 275. Melt butter in a large pan over medium-high heat
- Sauce:
- 4 TB butter
- 4 fish fillets, such as redfish, snapper, or tilapia
- Tony Chachere’s, to taste
- Pepper, to taste
- 1/2 - 1 cup flour
- 1 stick butter
- 1/2 cup sliced almonds
- 1 – 2 tsp white wine
- 1 – 2 tsp fresh lemon juice
Olive Cheese Bread

- 6 oz can whole black olives, drained
- 1 cup pimento-stuffed olives OR another can whole black olives, drained
- 1 stick salted butter, room temperature
- ½ cup mayo
- 3 cups shredded Monterey Jack cheese or a blend with Monterey Jack cheese
- 1 loaf French bread or a baguette

- 1/4 lb. (4 oz.) regular or light Velveeta, cut into 1/2-inch cubes

- 4 eggs, separated
- 3 TB chopped fresh chives or 1/2 tsp freeze-dried chopped chives

In a medium bowl, combine bread crumbs, meat, egg, garlic, salt, & pepper
- 1/2 cup dry bread crumbs
- 1 lb. ground meat
- 1 egg, lightly beaten
- 2 garlic cloves, minced

- 1/2 tsp. ground pepper
- 1 envelope brown gravy mix
- Canola oil
