Mini Hash Brown Cups

Simply Potatoes are refrigerated & sold near the crescent rolls, butter, or eggs
- 1 lb. pork sausage
- 4 large eggs
- ½ cup milk
- 1 (20 oz.) package Simply Potatoes Shredded Hash Browns
- 3 TB butter, melted
- ½ tsp pepper
- 1½ cups shredded cheddar cheese
Salted Caramel White Russian

Heat caramel sauce in the microwave in a little cup for 10 seconds
- Salted caramel sauce
- Ice
- 1½ oz. Salted Caramel Irish Cream
- 1½ oz. Amaretto
- 3 oz. half & half
- 1 to 2 pinches sea salt flakes
Cheddar-Herb Twists

- 1 cup finely shredded sharp Cheddar
- 1 1/2 tsp chopped fresh thyme OR 1/2 tsp dried thyme
- 1 1/2 tsp chopped fresh sage OR 1/2 tsp dried sage
- 3/4 tsp chopped fresh oregano OR 1/4 tsp dried oregano
- 1/8 tsp cayenne pepper
- Salt to taste

Unfried Chicken

- Nonstick cooking spray
- 8 skinless boneless chicken thighs, trimmed of all visible fat (about 1 1/2 pounds)
- Salt, pepper, & garlic powder, to taste

- 1/2 teaspoon Louisiana Hot Sauce or Tabasco Sauce

Garlic Butter Shrimp & Rice

- 1 cup dry white rice
- 6 TB butter
- 1 lb. large shrimp, peeled, deveined, & tails removed
- 3 to 4 garlic cloves, minced
- ¼ cup shredded Parmesan cheese

- Salt & pepper, to taste

Flaky Mushroom & Swiss Tarts

Heat oven to 400° F. Unfold the pastry & cut it into 4 squares
- 1 sheet puff pastry (half a 17.3-ounce package), thawed
- 2 TB olive oil
- 10 oz assorted mushrooms (such as button, cremini, shiitake, & oyster), sliced
- 1 shallot, chopped
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 cup dry white wine
- 1 cup grated Swiss, Gruyere, or sharp white Cheddar cheese
Cherry Tomato Mascarpone Tartlets

- Olive oil
- 1 cup mozzarella
- 1/3 cup Parmesan cheese, grated
- 2/3 cup panko bread crumbs
- ¼ tsp cayenne pepper or smoked paprika (I used 1/8 tsp of both)
- 1 TB chopped garlic, about 4 cloves
- 1 TB chopped fresh parsley or 1 tsp dried parsley
- 1 TB chopped fresh basil
Bow Tie Pasta with Mushrooms & Spinach

- 6 oz bow tie pasta
- 1 TB olive oil
- 1 medium onion, chopped
- 1 cup sliced portobellos, baby bellas, or other fresh mushrooms
- 2 cloves garlic, minced
- 4 cups thinly sliced fresh spinach
- 1 tsp snipped fresh thyme or 1/2 tsp dried thyme
- 1/8 tsp pepper
- 2 TB shredded Parmesan cheese
- 2 to 4 TB half & half, optional
Shrimp Brochette

Butterfly the shrimp by running a knife down the back side of the shrimp, but not slicing all the way through
- 1 lb. medium shrimp, peeled & deveined
- 4 oz. cream cheese OR 4 slices Pepper Jack cheese, cut into thin strips
- 2-3 jalapeños, seeded & cut into thin strips
- 15 or so slices (half as many as shrimp) Center Cut bacon, cut in half
