Smothered Pork Chops

Ingredients

  • 1 cup flour
  • 2 TB onion powder
  • 2 TB garlic powder
  • 1 tsp cayenne, or red, pepper
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4 bone-in pork chops
  • 1/4 cup olive oil
  • 1 1/2 cups chicken broth
  • 3/4 cup buttermilk

Preparation

Step 1

Heat oil in a large pan over medium-high heat. Combine flour & seasonings in a shallow dish. Pat pork chops with a paper towel. Dredge in seasoned flour, shaking off the excess. Add pork chops to the pan & cook for 3-4 minutes on each side until golden. Remove pork chops to a plate & add 1-2 TB flour to the pan drippings. Stir together then add chicken broth. Let the liquid cook about 5 minutes to reduce & thicken slightly. Stir in buttermilk to make a cream gravy. Return pork chops to the pan, coating with the gravy. Cover & simmer for 5-10 minutes until pork chops are cooked through.
