Ingredients

  • 1 cup flour
  • 1/4 cup unsweetened cocoa powder (not Dutch process)
  • 3/4 tsp. baking soda
  • 1/4 tsp. salt
  • 6 TB regular or light mayonnaise
  • 1/2 tsp. vanilla
  • 1/2 cup sugar
  • 1/2 cup water
  • 1/3 cup mini chocolate chips
  • Icing

Step 1

Preheat oven to 350. Line 9 standard-size muffin cups with liners. In a medium bowl, whisk together flour, cocoa powder, baking soda, & salt. In a large mixing bowl, whisk together mayonnaise, vanilla, & sugar. Add 1/3 of the flour mixture to the mayonnaise mixture, then stir in water. Fold in remaining flour mixture, stirring until batter is smooth. Stir in chocolate chips. Pour batter into muffin pan. Bake for about 20 minutes. Let cool completely, then top with icing.
