- 4 boneless, skinless chicken breasts, pounded thin

- 1 TB butter
- 1 (8-10 oz.) pkg. sliced mushrooms
- 1 large shallot, finely chopped
- 1 cup red wine
- 1/2 cup low-sodium chicken broth
- 2 tsp. chopped fresh thyme, OR 1 tsp. dried
Creamy Garlic Mushrooms & Bacon

Preheat broiler in the oven
- 4 slices bacon, sliced in ¼” strips
- 1 TB butter
- 8 oz baby bella mushrooms, quartered
- Olive oil
- 2 TB white wine
- 3 cloves garlic, finely chopped
- ¾ cup heavy cream or half & half
- 1½ tsp chopped parsley
- ¼ tsp dried thyme or ½ tsp fresh thyme
- Salt & pepper
- ¼ cup shredded mozzarella cheese
- 2 TB freshly grated Parmesan cheese
Smothered Pork Chops

- 2 TB garlic powder
- 1 tsp cayenne, or red, pepper
- 1 tsp salt

Pecan Crusted Tilapia #2

Cooking Light ~ This is good & very similar to the other pecan crusted tilapia I make
- 1 cup breadcrumbs or Panko breadcrumbs
- 1/4 cup pecan chips
- 1 tsp. salt
- 1/2 tsp. garlic powder
- 1/2 tsp. pepper
- 1/2 tsp. Tony Chachere's
- 1 cup low-fat buttermilk
- 1 tsp. La. Hot Sauce
- 1/3 cup flour
- 6 - 8 tilapia fillets
- Canola oil
- Lemon wedges
Garlic Chicken

Preheat oven to 425. In a small bowl, combine garlic, wine, lemon juice, & olive oil
- 4 boneless, skinless chicken breasts
- 2 tsp. minced garlic
- 3 TB white wine
- 3 TB lemon juice
- 1/4 cup olive oil
- 1/2 cup or more dry breadcrumbs or Panko bread crumbs
- 1/2 cup or more grated Parmesan cheese
Tarragon Chicken Salad

You can use cilantro or parsley for the tarragon as well as grapes for the cranberries
- 4 cups shredded rotisserie chicken
- 1 1/2 cups mayonnaise
- 1/4 cup chopped tarragon
- 1 cup sliced celery
- 1 cup dried cranberries
- Salt & pepper, to taste
- Sandwich Thins, Hawaiian rolls, croissants, etc.
Black-Eyed Pea Cornbread

- 1 lb spicy ground pork sausage
- 1 medium onion, chopped
- 1/2 bell pepper, chopped
- 1 cup white cornmeal
- 1/2 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp baking soda
- 2 large eggs, lightly beaten
- 1 cup buttermilk
- 1/3 cup vegetable oil
- 1 (15 oz) can Trappey's brand black-eyed peas with jalapeños, drained & rinsed
- 2 cups (8 ounces) shredded Cheddar cheese
- 3/4 cup cream-style corn

- 3 cups cooked brown rice, cooked a day ahead & refrigerated
- 1 lb. frozen medium or large shrimp, peeled & thawed
- 1/2 tsp cornstarch
- 2-3 TB canola oil, divided
- 1 medium onion, chopped
- 1 garlic clove, chopped
- 2 eggs, beaten
- 1 cup frozen peas & carrots
- 3-4 TB soy sauce
- Salt & pepper, to taste
