1. Heat oven to 350 degrees
- 2 2/3 C flour
- 1 t salt
- 1 C butter, softened
- 1 C sugar
- 1 large egg
- 1 t vanilla
- 9 oz white chocolate, chopped
Pumpkin Pecan Cake Roll

- Cake:
- 3 eggs
- 1 C sugar
- 3/4 C flour
- 3/4 C canned pumpkin
- 1 1/2 t cinnamon
- 1 t baking powder
- 1 t ginger
- 1/2 salt
- 1/2 t nutmeg
- 1 t lemon juice
- 1 C finely chopped pecans
- Filling:
- 1- 8 oz pkg cream cheese, softened
- 1/4 C butter, softened
- 1 C p sugar
- 1/2 t vanilla
Crock Pot Cheesy Chicken and Rice

Place broccoli and carrots in the bottom of the crock pot
- 4-6 cups fresh or frozen broccoli florets
- 4-5 carrots, sliced
- 2 cans of cream of chicken soup, undiluted
- 1 1/2 cup chicken broth
- 1 1/2 cup shredded cheddar cheese
- 4 chicken breasts, cut into serving sized portions
- 1 1/2 cup uncooked instant rice

Strawberry Rhubarb Pie

Bring rhubarb and water to boil/ Remove from heat
- 3 Cups chopped fresh rhubarb
- 1 Cup water
- 1 Pkg (6 oz) strawberry jello
- 1 Cup sliced fresh (or frozen) strawberries

- 2 1/2 cups white chocolate chips
- 1 cup sweetened condensed milk
- 1 1/2 teaspoons peppermint extract
- 6 drops green food coloring (optional)
- Topping
- 1 cup Andes Mints, chopped
Southwestern Corn Muffins

Saute peppers and onion in oil until tender
- 1/2 cup chopped sweet red pepper
- 1/2 cup chopped sweet yellow pepper
- 1/4 cup chopped onion
- 2 tbsp cooking oil

- 1/4 cup creamy peanut butter
- SECOND LAYER
- 4 tablespoons butter
- 1 cup sugar
- 1/4 cup evaporated milk
- 1 1/2 cups marshmallow crème
- 1/4 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 1 cup salted peanuts, chopped
- THIRD LAYER
- 14-oz. bag caramels, unwrapped
- 1/4 cup evaporated milk
- FOUR TH LAYER
- 1 cup milk chocolate chips
- 1/4 cup creamy peanut butter

- 1 box devils food cake mix, plus ingredients to make the cake
- 1 can sweetened condensed milk
- 1 jar Smucker's hot caramel ice cream topping
- 1/2 cup chocolate chips
- 2 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp vanilla
- 3 snickers candy bars, chopped
- 1/3 cup peanuts, chopped

Tomato Bisque Soup

Directions 1.Heat the butter in a large soup pot over medium-high heat
- Ingredients
- 4 tablespoons butter (we used unsalted)
- 1 onion, diced
- 2 slices bacon, proscuitto, or ham, minced
- 4 cloves garlic
- 5 tablespoons whole-wheat flour
- 5 cups chicken broth/stock
- 1 28-ounce can of whole, peeled tomatoes (with liquid) or about 5 – 6 medium-sized fresh tomatoes that have been boiled for 1 minute and then peeled…either way they need to be roughly chopped before using
- 3 parsley sprigs
- 3 fresh thyme sprigs
- 1 bay leaf
- 1 cup heavy cream (or less if desired)
- 1 teaspoon salt (or more if you are using unsalted homemade broth)
- Freshly ground black pepper, to taste
