Mock Pound Cake

1. Mix jello with cake mix
- 1 yellow cake mix
- 1 - 3 oz pkg orange, lemon or pineapple jello
- 4 large eggs at room temperature
- 3/4 C water
- 1/2 C oil
Chicken Penne Florentine Bake

1. Heat oven to 375. 2. Toss chicken with flour
- 1 lb. boneless chicken breasts, cut into bite size pieces
- 2 T flour
- 2 C multigrain penne pasta, uncooked
- 1 T Kraft sun-dried tomato salad dressing
- 1 C chicken broth
- 2 oz cream cheese, cubed
- 1 pkg (10 oz) spinach
- 1 C mozzaarella cheese
- 2 T grated parmesan cheese
Personalized Baked Oatmeal

1. Preheat oven to 350 degrees
- ◾2 eggs
- ◾1 teaspoon vanilla extract
- ◾2 cups applesauce, unsweetened
- ◾1 banana, mashed
- ◾6 packets of Sweetleaf Stevia or 1 1/2 teaspoons stevia powder or use 1/2 cup honey
- ◾5 cups, Old Fashioned rolled oats { I used Bob’s Red Mill}
- ◾1/4 cup flaxseed meal*
- ◾1 tablespoon ground cinnamon
- ◾3 teaspoon baking powder
- ◾1 teaspoon salt
- ◾2 3/4 cups milk (I used 1%)
- ◾Optional toppings: raisins, walnuts, chocolate chips
- Whole Flax seeds may be used but grind them yourself if not using already ground.
Tator Tot Breakfast Bake

In a 9×13 casserole add the TATER TOTS, salt to taste,and pepper to taste
- 3/4 – 1 bag TATER TOTS
- salt and pepper to taste
- 1 small onion or 1/2 large onion, diced
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1 lb bacon crisp, crumbled
- 8 eggs
- 2 cups milk
- 3 cups cheddar jack or colby jack cheese, shredded

Cream butter and cream cheese til fluffy
- 3 sticks butter
- 3 C sugar
- 1 - 8 oz pkg cream cheese
- 6 eggs
- 3 C flour
- 1 T vanilla
No Dough Pizza

Preheat oven to 350. Lightly spay a 9×13 baking dish with cooking spray
- Crust
- 1 (8 oz) package of full fat cream cheese, room temperature
- 2 eggs
- 1/4 tsp ground black pepper
- 1 tsp garlic powder
- 1/4 cup grated parmesan cheese
- Topping
- 1/2 cup pizza sauce
- 1 1/2 cups shredded mozzarella cheese
- toppings - pepperoni, ham, sausage, mushrooms, peppers
- Garlic powder
Blueberry French Toast

Cut bread into 1 in cubes; place half in greased 13 X 9 inch baking dish
- French Toast:
- 12 slices day old white bread, crusts removed
- 2 pkgs cream cheese (8 oz each)
- 1 C fresh or frozen blueberries
- 12 eggs
- 2 C milk
- 1/3 C maple syrup or honey
- Sauce:
- 1 C sugar
- 2 T cornstarch
- 1 C water
- 1 C fresh or frozen blueberries
- 1 T butter or margarine
Cheeseburger Soup

1.Brown the ground beef in 3 quart saucepan
- 1/2 pound ground beef (use 1 pound)
- 3/4 cup chopped onion
- 3/4 cup shredded carrots
- 3/4 cup diced celery
- 1 teaspoon dried basil
- 1 teaspoon dried parsley flakes
- 4 tablespoons butter, divided
- 3 cups chicken broth
- 4 cups peeled and diced potatoes
- 1/4 cup all purpose flour
- 2 cups of Velveeta processed cheese cubed (I used 16 ounce) or- 2 cups shredded cheddar cheese
- 1 1/2 cups milk
- 3/4 teaspoon salt
- 1/4 to 1/2 teaspoon pepper
- 1/4 cup sour cream
Loaded Cauliflower Casserole

Preheat oven to 400 degrees and place cauliflower on a large baking sheet
- 2 lbs cauliflower florets, cut into 1/2" pieces
- 1 Tbsp olive oil
- 2 Tbsp butter, unsalted
- 2 Tbsp all-purpose flour
- 1 cup milk, room temperature
- 3/4 tsp salt
- 1/4 tsp garlic powder
- 1 cup shredded Monterey Jack cheese
- 1/4 cup sour cream
- 1 bunch green onions, thinly sliced
- 1/2 lb bacon, cooked and crumbled
- salt and pepper to taste
- 1/2 cup shredded sharp cheddar cheese
Blueberry Streusel Coffee Cake

Cake: In a mixing bowl, combine flour, sugar, baking powder and salt
- Cake:
- 2 C flour
- 3/4 C sugar
- 2 t baking powder
- 1/4 t salt
- 1 egg, beaten
- 1/2 C milk
- 1/2 C butter or margarine, softened
- 1 C fresh or frozen blueberries
- 1 C chopped pecans
- Streusel:
- 1/2 C sugar
- 1/3 C flour
- 1/4 C cold butter or margarine
