Best Ever Bourbon Brownies

1. Mix brownies as directed on package
- Frosting:
- brownie cake mix
- 2-3 T bourbon
- 3 T butter
- 1 1/2 C p. sugar
- 2-3 T milk
- 1/4 t vanilla
- 1 oz semisweet chocolate, melted
Easy Rhubarb Dessert

Mix cake as instructed on pkg
- 1 pkg (18 1/2 oz) yellow cake mix
- 5 Cups diced fresh or frozen rhubarb
- 1 Cup sugar
- 1 Cup heavy cream

Mix together and divide into 12 or 13 balls
- 3 C riced potatoes
- 2 C flour
- 1 t. salt
- 1 T sugar
- 8 T melted shortening or 6 T with 2 T cream
Chicken Bundles

In a mixing bowl, beat cream cheese, milk, dill, salt and pepper until smooth
- 1 pkg (8 oz) cream cheese, softened
- 1/4 C milk
- 1 t dill weed
- 1/2 t salt
- 1/2 t pepper
- 4 C cubed cooked chicken (or turkey)
- 1/2 C finely chopped celery
- 4 green onions with tops, thinly sliced
- 3 tubes (8 oz each) refrigerated crescent rolls
- 1/4 C butter or margarine, melted
- 1/4 C seasoned bread crumbs
Black Bean Chili with Rice

Brown beef. Add all ingredients except rice
- 1 # lean ground beef
- 3 C or 3 cans drained black beans
- 1 C diced green pepper1 C chopped onion
- 1 C diced carrots
- 1 T chili powder
- 2 garlic cloves, minced
- 2 bay leaves
- 1/2 t pepper
- 3 C vegetable or tomato juice
- 1 t cumin
- 1 can corn
- 4 C hot cooked rice
- chips, tomatoes, cilantro and sour cream to garnish as desired
Cucumber Salsa

- 2 cups finely chopped seeded peeled cucumber
- 1/2 cup finely chopped seeded tomato
- 1/4 cup chopped red onion
- 2 Tbsp minced fresh parsley
- 1 jalepeno pepper, seeded and chopped
- 4-1/2 tsp minced fresh cilantro
- 1 garlic clove, minced or pressed
- 1/4 c reduced-fat sour cream
- 1-1/2 tsp lemon juice
- 1-1/2 tsp lime juice
- 1/4 tsp ground cumin
- 1/4 tsp seasoned salt
- Tortilla chips
Butterscotch Pumpkin Cake

- 1 C butterscotch chips
- 2 C flour
- 1 3/4 C sugar
- 1 T baking powder
- 1 1/2 t cinnomon
- 1 t salt
- 1/2 t nutmeg
- 1 C pumpkin (canned)
- 1/2 C oil
- 3 eggs
- 1 t vanilla
- powdered sugar
Black Bean Burgers

1. Preheat oven to 375 F
- 2 T vegetable oil
- 1 Stalk celery, chopped
- 1 onion, finely chopped
- 1 clove garlic, minced
- 1- 15 oz can black beans, rinsed and drained
- 1 large egg, lightly beaten
- 1 T cumin
- 1/2 C bread crumbs
- salt and pepper
California Medley Soup

Dissolve bouillon cubes in hot water
- 1 1/2 C boiling water
- 2 chicken bouillon cubes
- 1 1/2 C (1 pkg)California Blend vegetables
- 1/2 C milk
- 1 Can Cheddar Cheese soup
- (could also substitute 1 lb Velveeta cheese and can of chicken soup in place of cheddar cheese soup)
- Can also add onion to taste
NoBake Chocolate Peanut Butter Bars

Combine first four ingredients and press down in the bottom of an 8x8 pan
- 1 cup butter, melted
- 1 cup graham wafer crumbs
- 1 cup confectioners sugar
- 1/2 cup peanut butter
