Bruschetta Biscuits with Feta

1. Prehear oven to 425 degrees
- 3/4 C milk
- 1/3 C olive oil
- 1 C fresh baby spinach leaves, chopped
- 1/4 C fresh basil leaves, chopped
- 1/4 C dried tomatoes, (not oil packed) chopped
- 1/4 C pitted kalamata olives, chopped
- 2 C flour
- 2 t baking powder
- 3 T crumbled feta cheese
- 1 T pine nuts
Triple A Apple Pie

Mix ingredients together and place in 9 in greased pie plate
- 1 recipe Oil Pastry (see below)
- 1/4 C brown sugar
- 1 T flour
- 1 t apple pie spice
- 4 medium cooking apples, cored and sliced
- 1 medium pear, cored and sliced
- 1 15 oz can apricot halves in light syrup, rinsed, drained and sliced (or use fresh apricots OR 1 cup blueberries)
Rhubarb Delight

1. For crust, mix flour, sugar and butter; pat into 10-in
- CRUST:
- 1 cup flour
- 1/4 cup granulated sugar
- 1/2 cup butter or margarine
- RHUBARB LAYER:
- 3 cups fresh rhubarb, cut into 1/2 inch
- pieces
- 1/2 cup sugar
- 1 tablespoon flour
- CREAM Cheese LAYER:
- 12 ounces cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- TOPPING:
- 1 (8 ounce) container dairy sour cream
- 2 tablespoons sugar
- 1 teaspoon vanilla
Breakfast Oatmeal Cupcakes

Preheat oven to 380 F, and line 24-25 cupcake tins
- ◾5 cups rolled oats (400g)
- ◾2 1/2 cups over-ripe mashed banana, measured after mashing (For all substitution notes on this recipe, see nutrition link below.) (600g)
- ◾1 tsp salt
- ◾5 NuNaturals stevia packets (or omit and use 5 tbsp liquid sweetener of choice–such as pure maple syrup or agave–instead)
- ◾optional: 2/3 cup mini chocolate chips
- ◾2 2/3 cups water (640g) (If using the liquid-sweetener option, scale water back by 1/3 cup.)
- ◾1/4 cup plus 1 tbsp oil (45g) (I really like coconut, but veg oil will also work. For lower-fat substitution notes, see nutrition link below.)
- ◾2 1/2 tsp pure vanilla extract
- ◾optional add-ins: cinnamon, shredded coconut, chopped walnuts, ground flax or wheat germ, raisins or other dried fruit, etc.
Layered Summer Salad

LAYER spinach, 1 cup of the cheese, the mushrooms, onions, tomatoes and peas in 3-qt
- 4 cups torn romaine lettuce
- 1-1/2 cups KRAFT Shredded Mild Cheddar Cheese, divided
- 2 cups sliced fresh mushrooms
- 1 small red onion, sliced, separated into rings
- 2 tomatoes, chopped
- 1 pkg. (10 oz.) frozen green peas, thawed, drained
- 1/2 cup KRAFT Real Mayo Mayonnaise
- 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 1/4 cup chopped fresh basil
- 4 slices OSCAR MAYER Bacon, crisply cooked, drained and crumbled
Strawberry Banana Jam

Boil jars. Let jars and lids sit in hot water until ready to fill
- 2 quarts fully ripe strawberries
- 3 fully ripe bananas
- 3 T lemon juice
- 6 3/4 C sugar
- 1 box fruit pectin (surejell)
- 1/2 t butter
Pumpkin Scones

Directions: Butter: Place cranberries in a small bowl; add boiling water
- Butter:
- 2 Tbls. Dried cranberries
- 1/2 C. Boiling water
- 1/2 C. Butter
- 3 Tbls. Confectioner's sugar
- Scones:
- 2 1/4 C. Flour
- 1/4 C. Packed brown sugar
- 2 tsp. Baking powder
- 1 1/2 tsp. Pumpkin Pie Spice
- 1/4 tsp. Salt
- 1/4 tsp. Baking soda
- 1/2 C. Cold butter
- 1 egg
- 1/2 C. Canned pumpkin
- 2 Tbls. Pecans, chopped (optional)
Lasagna Soup

Cook all ingredients (except noodles) for 5 hours in crockpot on low
- 1 # ground beef or turkey
- 1/2 onion diced (or 1 T dried onion)
- 1 red pepper, diced (optional)
- 1 14.5 oz can diced tomatoes
- 1 28 oz can crushed tomatoes
- 1 tsp minced garlic
- 1 T Italian seasoning
- 4 C beef broth
- 12 oz lasagna noodles
- ricotta cheese
- 1 C mozzarella cheese
- 1 C parmesan cheese
Hearty Baked Potato Salad

- 8 red potatoes
- 1/2 C onion, chopped
- 2 T parsley, chopped
- 1 can (11 oz) cheddar cheese soup
- 1/2 C mayonnaise
- 1/2 C plain yogurt
- 4 oz bacon, cooked, drained and crumbled
- Paprika for garnish
Cranberry Spinach Salad

1. Divide spinach between 2 plates
- 2 C spinach
- 1 T slivered almonds, toasted
- 1 T dried cranberries
- 1/2 oz (2 T) smoked provolone or smoked mozzarella
- Dijon-Orange Vinaigrette (below)
