Strawberry Rhubarb Pie

  • 3 Cups chopped fresh rhubarb
  • 1 Cup water
  • 1 Pkg (6 oz) strawberry jello
  • 1 Cup sliced fresh (or frozen) strawberries
  • 1 carton cool whip
  • 1 graham cracker crust (or shortbread crust)



Step 1

Bring rhubarb and water to boil/ Remove from heat. Add jello and stir until dissolved. Cool. Stir in sliced strawberries. Chill until it begins to thicken. Fold half of cool whip into rhubarb mixture. Pour into crust. Chill 2 hrs or til firm. Top with remaining cool whip.
