Apricot Onion Raisin Sauce

Melt butter with oil add onions and sugar, sauté until tender and slightly caramelized Deglaze with wine and vineg
- 1/4 c butter
- 2 Tbs olive oil
- 1 1/4 # red onion, dice fine
- 2 Tbs sugar
- 1/2 c white wine
- 2 Tbs cider vinegar
- 2/3 c fresh apricots, chopped
- 1/2 c dried apricots, chopped
- 1/3 c white raisins
Salmon Tartare

Place salmon on a plate; freeze until well chilled, about 20 minutes
- 8-oz. boneless salmon fillet, skinless
- finely diced, seeded cucumber
- fresh lime juice
- minced fresh chives
- minced fresh cilantro
- grapeseed or vegetable oil
- minced, seeded jalapeño
- minced shallot
- minced peeled fresh ginger
- Asian sesame oil
- (scant) lime zest
- Kosher salt and freshly ground black pepper
- Thick-cut potato or tortilla chips
Yellow Squash and Lemon Marmalade

1. Day 1, wash Yellow Summer Squash and scrub lemons
- 3 lbs of Yellow Squash (About 6 cups of coarsely chopped squash leaving peels intact)
- 3 Lemons sliced paper thin (Use organic if you can find them)
- 6 Cups Pure Cane Sugar
- 1/2 teaspoon freshly grated ginger
- 4 Tablespoons finely minced Lemon Balm
Red Chili-Citrus Paste

- 2 tablespoons ancho chili powder
- 2 tablespoons California chili powder
- (Or 4 tablespoons commercial chili powder mixture)
- 3 garlic cloves, chopped
- 2 tablespoons chopped fresh orange
- 2 tablespoons fresh orange juice
- 1 tablespoon lemon or lime juice
- 1 teaspoon ground cumin (omit if using chili powder mixture)
- Pinch oregano
