Peanut Butter and Jelly Crumb Muffins

- 6 tablespoons unsalted butter
- 3/4 cup peanut butter
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 large egg
- 1/2 cup packed brown sugar
- 2 teaspoons vanilla extract
- 3/4 cup milk
- 12 ounces strawberry preserves
- crumb topping
- 1/3 cup brown sugar
- 1/3 cup sugar
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 1/2 cup all-purpose flour
Oreo Truffles

These are great for any holiday - Keep refrigerated
- 1 package Oreo cookies
- 1 8oz cream cheese
- 1 teas. vanilla extract
- Melting chocolate - Approx 1 lb for dipping and 1/2 lb for drizzling (you can use different colors for drizzle)
- I have used the Wilton Candy melts - light cocoa for dipping
Jim's Easy Potatoes

Preheat oven to 375. In a large bowl, combine all ingredients except cornflakes crumbs and butter
- 1 32 oz. pkg. O'Brien-style frozen potatoes, thawed
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 12 ounces grated cheese, of choice
- 2 cups sour cream
- 1 medium onion, sliced
- 2 cups cornflake crumbs
- 1/2 cup melted butter
- salt and pepper to taste
Red Velvet Cupcakes with Cream Cheese Frosting

- For the Cupcakes:
- 4 tablespoons unsalted butter, at room temperature
- 3/4 cup granulated sugar
- 1 egg
- 2 1/2 tablespoons unsweetened cocoa powder
- 3 tablespoons red food coloring
- 1/2 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1 cup + 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons distilled white vinegar
- For the Cream Cheese Frosting:
- 4 ounces butter, at room temperature
- 4 ounces cream cheese, at room temperature
- 2 1/2 cups powdered sugar
- 1 tablespoon vanilla extract
Shish-Kabobs

Place beef cubes in large bowl
- 1 beef sirloin tip roast 5-6 pounds, cut into 1" cubes
- 2 1/2 tablespoons shrimp boil spices, placed in cheese, cloth
- 1/3 cup vegetable oil
- 1/3 cup burgundy wine
- 1/2 lemon, juice of
- 1 large clove garlic, crushed
- 1/3 cup soy sauce
Avocado Chicken Salad

You can also use a already cooked Rotisserie chicken as well
- 2 or 3 boneless, skinless chicken breasts
- 1 avocado
- 1/4 chopped onion
- juice of 1/2 a lime
- 2 Tbsp cilantro
- salt and pepper to taste.
Grilled Green Beans

1. Mix all ingredients except the parmesan cheese in a large ziplock bag
- Grilled Green Beans. The marinade can be used on broccoli and asparagus too
- Ingredients-
- 8 oz green beans
- 1 tbsp lemon juice
- 1 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1/2 tsp kosher salt (optional)
- pepper to taste
- parmesan cheese
Apple Nut Lattice Tart

Prepare pie crust according to Pkg
- Filling:
- 1-15 oz Pkg. ready made pie crusts (crusts) Pillsbury
- 1 teas. flour
- 3 1/2 cups thinly sliced peeled apples
- 1/2 cups sugar
- 3 TBL golden raisins
- 3 TBL chopped walnuts or pecans
- 1/2 tea. cinnamon
- 2 tea. lemon juice
- Glaze:
- 1/4 cup powdered sugar
- 1 1/2 tea lemon juice
Mom's Macaroni Salad

Cook Macaroni - drain and cool Add all ingredients mix together
- 1 lb elbow macaroni
- 2 Cups Chopped Celery (no leaves)
- 3/4 Cup Green Pepper Chopped
- 3-4 Green onions Sliced
- 1 cup peas frozen - rinsed and drained
- 5 hard boiled eggs chopped
- Mortons nature seasoning to taste
- 1 jar 32 oz jar Hellmanns light mayo
