- 2 1/2 pounds pot roast
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 small onion, finely minced
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 2 small cans tomato paste
- 1 clove garlic, cut into quarters
- 1 clove garlic, minced
- 1 teaspoon thyme
- 1/4 teaspoon pepper
- 3 1/2 cups water
Slow Simmered and Savory Pot Roast

- 2 lbs. sirloin roast or good pot roast, salt & pepper
- 1/2 lb fingerling potatoes scrubbed
- 12 baby carrots, already peeled
- 1/2 cup onion
- 1 14 oz. can stewed tomatoes or chopped tomatoes
- 3/4 cup red wine, 1 small bottle
- 1 envelope dry onion soup and recipe mix
- 1/4 teas. dried thyme
- 3 TBL cornstarch
Morning Glory Muffins

Preheat oven to 325. Grease muffing tins
- 2 cups peeled, diced apple
- 2 cups grated carrots or zucchini, or combination
- 3/4 cup sugar
- 2 large eggs lightly beaten

- 2 cups all-purpose flour

Crock Pot Recipes Stuffed Green Peppers

Slow Cooker Chicken Taco Soup

Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker
- 1 onion, chopped
- 1 (16 ounce) can chili beans
- 1 (15 ounce) can black beans
- 1 (15 ounce) can whole kernel corn, drained
- 1 (8 ounce) can tomato sauce
- 1 (12 fluid ounce) can or bottle beer
- 2 (10 ounce) cans diced tomatoes with green chilies, undrained
- 1 (1.25 ounce) package taco seasoning
- 3 whole skinless, boneless chicken breasts
- shredded Cheddar cheese (optional)
- sour cream (optional)
- crushed tortilla chips (optional)
Escalloped Apples

Cook sugar, water and lemon for 5 minutes
- 3/4 cup sugar
- 1 1/2 cups water
- 1 slice lemon
- 8 medium Delicious or Granny Smith Apples
- 1 TBL cornstarch
- 1/2 teaspoon cinnamon
Easy Chicken Pad Thai

Instructions In a medium bowl, combine the sliced chicken, cornstarch and tamari, stir to coat; set aside
- 1 lb. chicken, thinly sliced
- 1 tablespoon cornstarch
- 2 tablespoons low-sodium tamari (or soy sauce)
- 1/4 cup fish sauce
- 1 tablespoon tamarind paste (see note)
- 1 tablespoon water
- 2 tablespoons low sodium tamari (or soy sauce)
- 3 tablespoons lime juice
- 1/3 cup low-sodium chicken broth
- 1 teaspoon sambal oelek (or more if you'd like it spicier)
- 1/3 cup brown sugar
- 1 tablespoon oil
- 12 ounces flat rice noodles
- 2 tablespoons oil
- 5 cloves garlic, minced
- 1 bunch scallions, sliced (light greens and darks separated)
- 1 cup carrots
- 3 eggs, lightly beaten
- 1 cup bean sprouts
- 1 tablespoon cornstarch + 1 tablespoon water (made into a slurry)
- 1/2 cup cilantro, chopped
- 1/3 cup roasted peanuts, chopped (see note)
Cucumber Onion Salad
