Baked Rigatoni with Eggplant and Sausage

Directions Bring a large pot of salted water to a boil over high heat for the pasta
- Kosher Salt
- Extra-virgin olive oil
- 6 links fennel pork sausage (about 3/4 pound)
- 1 large eggplant (about 1 1/2 pounds), cut into 1-inch pieces
- 1 large onion, chopped
- 3 garlic cloves, chopped
- 1 large can (28 ounces) peeled whole tomatoes, preferably San Marzano
- Leaves from 1 small bunch basil
- 1 pound rigatoni
- 1 pound fresh mozzarella
- Freshly ground black pepper
- 1 cup freshly grated Parmigiano-Reggiano
Old Fashioned Strawberry Pie

Combine sugar, flour, and tapioca
- 1 Cup Sugar
- 1/3 cup flour
- 1 teaspoon tapioca
- 3 pints strawberries
- 1/2 lemon, juice of
- 1 tablespoon butter
- 2 crusts
Cherry Cheesecake

Preheat oven to 350. Blend first 3 ingredients til crumbly
- Crust
- 1 1/2 cups flour
- 1 1/2 sticks butter
- 1 1/2 tablespoons sugar
- 2 8 oz package Cream cheese
- 2 cups powdered sugar
- 1 envelope dream whip, prepare acc. to dir.
- 1 lg. can cherries
Shrimp And Artichoke Pasta

Heat skillet until medium high heat
- 2 tablespoons olive oil
- 5 jumbo shrimp
- 1 tablespoon fresh chopped garlic
- 5 (1/4 pieces) of artichokes
- 2 tablespoons sundried tomatoes
- 3 oz. white wine
- juice of 1/2 lemon
- 4 oz. cold butter
- salt and pepper to taste
- fettuccine pasta, cooked
Prime Rib with Rub

- 1- 5 -6 lb bone in prime rib roast
- 6 Cloves of garlic
- 1/4 cup fresh rosemary leaves
- 1/2 cup fresh basil leaves
- 2 teas. Kosher salt
- 2 teas. Freshly ground black pepper
- 3 TBL. Dijon Mustard
- 3 TBL. Extra-virgin olive oil
Lemon-Ginger Cookies/Refrigerator Cookies

- 1/2 recipe Salted Caramel Sauce
- 5 tart-crisp apples, peeled, cored and sliced 1/8-inch thick (I used a mix of Granny Smith, Fuji and Honeycrisp)
- 3/4 cup lemon juice
- 2/3 cup granulated sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1/8 teaspoon ground nutmeg
