Sweet Potato Casserole Crock-Pot

In a large bowl, combine the potatoes, sugar, butter, coconut, pecans, and cinnamon
- 2 pounds sweet potatoes, peeled and cut into 1/4" cubes
- 1/2 cup pecans, chopped and toasted
- 1 teaspoon ground cinnamon
- 1/2 cup brown sugar, packed
- 1 teaspoon coconut extract
- 1/2 cup butter, melted
- 1 teaspoon vanilla extract
- 1/2 cup coconut, grated

- 4 Cups Old-fashiond rolled oats
- 2 Cups Sweetened, shredded coconut
- 2 Cups Sliced Almonds
- 3/4 Cup Vegetable oil
- 1/2 Cup good Honey
- 1 1/2 cup small-diced Apricots
- 1 Cup small-diced Figs
- 1 Cup dried Cherries
- 1 Cup dried Cranberries
- 1 Cup Roasted, Unsalted Cashews
Oma's Rhubarb Cake

- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1 cup all purpose flour, for dredging
- 3 eggs, beaten
- 3 Tablespoons milk
- 2 Tablespoons of parsley, chopped
- 1 cup panko bread crumbs
- 24 jumbo shrimp, shelled, deveined, tail on
- 4 cups canola oil for frying
- 1/2 cup plum sauce
- 1 Tablespoon horseradish
One-Pot Pasta with Spinach and Tomatoes

1. Heat a Dutch oven or large saucepan over medium-high heat
- 1 tablespoon olive oil
- 1 cup chopped onion
- 6 garlic cloves, finely chopped
- 1 (14.5-ounce) can unsalted petite diced tomatoes, undrained
- 1 1/2 cups unsalted chicken stock (such as Swanson)
- 1/2 teaspoon dried oregano
- 8 ounces whole-grain spaghetti or linguine (such as Barilla)
- 1/2 teaspoon salt
- 10 ounce fresh spinach
- 1 ounce Parmesan cheese, grated (about 1/4 cup)
