Stuffed Parmesan Chicken

1. Cut a pocket into each chicken breast
- 3 chicken breasts, boneless and skinless
- Salt, to taste
- 1 cup mozzarella
- 2 cups flour
- 6 eggs, beaten
- 2 cups bread crumbs
- 1 cup oil, for frying
- 3 cups tomato sauce
- 1/2 cup parmesan
- 2 tablespoons basil

bring a large pot of water to boil for the pasta
- for the tomato sauce –
- 1 1/2 pounds fresh tomatoes (about 9 medium)
- 1 small onion, finely diced
- 3 garlic cloves minced
- 1/4 cup minced fresh basil
- olive oil
- for the alfredo sauce –
- (if you want to lighten it up, halve the alfredo and keep the tomato sauce the same)
- 1 tablespoon unsalted butter
- 2 teaspoons flour
- 3/4 cup whole milk
- 1/4 cup half & half
- 2 garlic cloves peeled and crushed
- 1 cup grated parmesan cheese
- 1/2 pound farfalle or other short cut pasta

- 1/2 cup Vegetable shortening
- 1 cup butter
- 2 3/4 c Sugar
- 6 large eggs
- 3 cup All Purpose Flour
- 1 Tsp Baking Powder
- 1/4 cup Half and Half Milk
- 1 Tsp Vanilla
- 3/4 cup Crushed Pineapple with Juice
- Glaze.
- 1 1/2-2 cups confectionary sugar
- 1/2 cup crushed pineapple

Slow Cooker Sheperds Pie

Place the beef cubes in a large slow cooker
- FOR THE MASHED POTATOES:
- 1 1/2 pounds (680 g) boneless beef chuck roast, trimmed and cut into 1-inch cubes
- 3 cloves garlic, minced
- 4 medium carrots, peeled and cut into 1/4″ slices
- 8 ounces (227 g) white mushrooms, cleaned and roughly chopped
- 1 1/2 cups (217 g) frozen corn, thawed
- 3/4 cup (180 ml) low-sodium beef broth
- 6 tablespoons (100 g) tomato paste
- 2 teaspoons (10 ml) Worcestershire sauce
- 1 teaspoon (1 g) dried oregano
- 1 1/2 tablespoons (18 g) House Seasoning*
- 3 tablespoons (24 g) all-purpose flour
- 1 1/2 cups (240 g) frozen peas, thawed
- Salt and freshly ground black pepper, to taste
- 2 1/2 pounds russet potatoes, peeled and cut into 2-inch pieces
- 1 teaspoon (6 g) salt
- 1 cup (240 ml) milk, warmed
- 6 tablespoons (85 g) butter, melted
- 1 1/2 cups (6 ounces) shredded cheddar cheese
- Salt and freshly ground black pepper, to taste
Sausage Alfredo

Prepare Pasta according to the pkg
- 1 Pkg. Hillshire Farm Smoked Sausage or you can use chicken breast
- 1 T Olive Oil
- 2 cloves garlic, minced
- 2 T Flat leafed Parsley, chopped
- 1/2 Onion, diced
- 1 !/2 t salt
- 1/2 t ground white pepper
- 8 oz. Pasta, cooked
- 2 cups heavy cream
- 2 t cajun seasoning
- 1/2 cup grated Parmesan
Cabbage And Kielbasa Skillet

Heat olive oil in a large pan or skillet over medium-high heat and sauté onion until softened and translucent
- 1 (14 oz.) package kielbasa, thinly sliced
- 1 large head green cabbage, cored and sliced
- 4 cloves garlic, minced
- 1/2 yellow onion, finely chopped
- 3 tablespoons olive oil
- 3 tablespoons unsalted butter
- 2 tablespoons white wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon paprika
- 1/4-1/2 teaspoon red pepper flakes
- Kosher salt and freshly ground pepper, to taste
- Fresh parsley, optional, garnish
Baked Potato Casserole

Preheat the oven to 350 degrees F
- 8 medium-size potatoes, peeled and chopped into 1-inch chunks
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups shredded cheddar cheese (divided)
- 6 slices of bacon, cooked and chopped
- 1 small onion, chopped
- 1/2 cup sour cream
- Green onions or parsley for garnish
Slow Cooker Lo Mein

LINE a slow cooker with a Reynolds® Slow Cooker Liner
- 2 pounds boneless pork shoulder
- 3 cups broccoli florets
- 2 carrots, julienned
- 2 stalks celery, diced
- 1 cup snow peas
- 1 (5-ounce) can sliced water chestnuts, drained
- 1 pound spaghetti
- FOR THE SAUCE
- 1/3 cup reduced sodium soy sauce
- 3 cloves, garlic, minced
- 2 tablespoon brown sugar, packed
- 1 tablespoons sambal oelek (ground fresh chile paste), or more, to taste
- 1 tablespoon oyster sauce
- 1 tablespoon freshly grated ginger
- 1 teaspoon sesame oil
Margarita Cheesecake Pie

HEAT oven to 350ºF. Mix cracker crumbs and butter; press onto bottom and up side of 9-inch pie plate
- 1 sleeve RITZ Crackers (34 crackers), crushed
- 6 Tbsp. butter, melted
- 2 large limes, divided
- 1 can (14 oz.) sweetened condensed milk
- 2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
- 1/4 cup fresh lemon juice
BLUEBERRY PASTRIES

- 2 Sheets of Ready Rolled Frozen Puff Pastry (thawed)
- 200 g of Blueberries (Fresh or Frozen)
- 3 Teaspoons of Corn Flour (aka Corn Starch)
- 3/4 Cup of Caster Sugar (Super Fine White Sugar)
- 1/2 Cup of Water
- 200 g of Ricotta Cheese
- 2 Tablespoons of Icing Sugar (aka Powdered Sugar)
- Milk (for brushing)
- Extra Powdered Sugar (for dusting)
