Fruit and Wine Sorbet

Make the simple syrup by dissolving one cup of sugar into one cup of water
- 1 cup strawberries, cut in half with stems removed
- 1 cup pineapple, cut into small pieces
- 1/2 cup blackberries
- 1/2 cup raspberries
- 1/2 cup mango, cut into small pieces
- 1 1/2 cup white wine
- 3/4 cup simple syrup (1 cup water & 1 cup sugar, dissolved)

- 1/4 c brown sugar
- 1/4 c white sugar
- 1 box vanilla pudding instant mix
- 2 teaspoons cinnamon
- 4 eggs
- 3/4 c water
- 3/4 c oil
- 1/2 c white wine (really any kind)
Jalapeño Popper Chicken

- 4 boneless, skinless chicken breasts
- 2 jalapeños, ribs and seeds removed, minced
- 1 large egg
- 1 (8 oz.) package cream cheese, room temperature
- 3/4 cup panko or seasoned breadcrumbs
- 1/2 cup mexican cheese blend, grated
- 2 teaspoons unsalted butter
- 1 teaspoon taco seasoning
- Kosher salt and freshly ground pepper, to taste
Cinnamon Roll Apple Pie

Begin by preheating your oven to 400 degrees F
- Crust:
- 1 refrigerated pie crust
- 1 tablespoon unsalted butter, melted
- 2 teaspoons ground cinnamon
- 2 teaspoons sugar

- 7 – 8 cups apples, peeled, cored, and thinly sliced (I used Granny Smith and Honeycrisp.)

- 1/4 1/4 1/4 c. low-sodium chicken broth
- 1/4 1/4 1/4 c. white wine
- 1/4 1/4 1/4 c. freshly chopped cilantro

COCONUT CHICKEN SKEWERS

- 8 chicken boneless, skinless chicken breasts or thighs, cut into 1-2-inch cubes
- 2 limes, juiced and zested
- 1 cup light coconut milk
- 1 1/2 tablespoons low-sodium soy sauce
- 1 1/2 tablespoons light brown sugar
- 1 tablespoon shallots, chopped
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon curry powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- 1/4-1/2 teaspoon red pepper flakes
- 1/4 teaspoon fresh ginger, grated
- freshly ground pepper, to taste

- Crust:
- 2 cups pretzel sticks
- 2 sheets graham crackers
- 1/2 cup (1 stick) unsalted butter, melted
- 1/4 cup sugar
- Filling:
- 1 (14 oz.) can sweetened condensed milk
- 1 (8 oz.) package frozen whipped topping
- 1/3 cup freshly squeezed lime juice
- 2 tablespoons tequila
- 1 1/2 tablespoons triple sec, optional
- Topping:
- Lime zest
- Whipped cream
- Sea salt, optional

For the crab cakes: (1) Line a baking sheet with aluminum foil
- For the crab cakes:
- 2 large eggs
- 2-1/2 tablespoons mayonnaise, best quality such as Hellmann’s or Duke’s
- 1-1/2 teaspoons Dijon mustard (I went with Grey Poupon)
- 1 teaspoon Worcestershire sauce (I went with the classic Lea & Perrins)
- 1 teaspoon Old Bay seasoning
- 1/4 teaspoon salt
- 1/4 cup finely diced celery, from one stalk
- 2 tablespoons finely chopped fresh parsley
- 1 pound lump crab meat
- 1/2 cup panko (Progresso makes good panko-style bread crumbs.)
- Vegetable or canola oil, for cooking (I went with LouAna canola for a nice, extra-light flavor.)
- For the tartar sauce:
- 1 cup mayonnaise, best quality such as Hellmann’s or Duke’s
- 1-1/2 tablespoons sweet pickle relish
- 1 teaspoon Dijon mustard
- 1 tablespoon minced red onion
- 1-2 tablespoons lemon juice, to taste
- Salt and freshly ground black pepper, to taste
