CHEESY MUSHROOM POTATO CASSEROLE

Preheat oven to 375º F and lightly grease a 9×13-inch baking dish with butter or non-stick spray
- 1 pound Yukon gold potatoes, peeled and sliced thinly
- 1 pound assorted mushrooms, scrubbed clean and roughly chopped
- 1 (10.75 oz.) can cream of mushroom soup
- 1 cup Gruyere cheese, grated
- 1/2 cup parmesan cheese, grated
- 1/2 cup low-sodium chicken stock
- 1/3 cup dry white wine
- 3 cloves garlic, minced
- 2 shallots, minced
- 2 tablespoons unsalted butter
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon fresh thyme leaves, chopped
- 1/2 teaspoon fresh sage leaves, chopped
- kosher salt and freshly ground pepper, to taste

Baked Eggnog French Toast

- 1 cup brown sugar
- 1/2 cup butter
- 2 Tbsp. light corn syrup
- 6-8 (1 inch) slices french bread, it depends on your size loaf of french bread. My loaf was very large and wide so that is all I could fit. You may need more depending on your loaf
- 1 cup egg nog
- 1 cup half and half
- 8 eggs
- 1/2 tsp. cinnamon
