BACON CHILI CORN CHOWDER

Serves 8
- 3 slices bacon, chopped into 1/2-inch pieces
- 1 1/2 large yellow onions, diced
- 1/2 cup scallions, chopped
- 2-3 tablespoons butter
- 6 ears corn, shucked, shaved off the cob (5 cups)
- 1-3 whole Chipotle peppers in Adobo sauce, diced
- 1 can (4 oz) diced green chilies
- 32 ounces low-sodium chicken broth
- 2 cups heavy cream
- 3 tablespoons Masa
- salt and pepper, to taste
Somali Style Rice

Soak rice in cold water 30 to 45 minutes, then drain
- FOR THE RICE:
- 4 cups Basmati rice
- 1/2 cup olive oil
- 1 large yellow onion, chopped
- 3 cloves garlic, minced
- 2 cinnamon sticks
- 5 whole green cardamom pods
- 10 whole cloves
- 2 teaspoons xawaash spice mix (see below)
- 8 cups chicken stock
- 1 teaspoon saffron threads, finely chopped
- 1 cup raisins
- Salt
- FOR THE XAWAASH (SOMALI SPICE MIX):
- 1 tablespoon cumin seeds
- 1 tablespoon coriander seeds
- 2 teaspoons dried whole sage
- 1 teaspoon black peppercorns
- 1 teaspoon fenugreek seeds
- 1 teaspoon ground turmeric
- 1 1/4 teaspoons ground ginger
- 8 green cardamom pods
- 10 whole cloves
- 1/4 teaspoon freshly grated nutmeg
- 1/3 cinnamon stick
- FOR THE TOPPING:
- 2 tablespoons olive oil
- 1 red onion, peeled and thinly sliced
- 1/4 cup raisins
- 1 red bell pepper, cored and thinly sliced
- Salt
PROSCIUTTO PASTA CASSEROLE

Preheat oven to 400º F and lightly grease a 9×13-inch baking dish
- 1 pound casarecce or fusilli or shell pasta
- 1/2 pound prosciutto, thinly sliced
- 1 quart whole milk or heavy cream, room temperature
- 1 1/2 cups fontina or Gruyere cheese, grated
- 1/2 cup parmesan cheese, grated
- 1/2 cup all-purpose flour
- 1/2 cup (1 stick) unsalted butter
- 1 pinch freshly grated nutmeg
- kosher salt and freshly ground pepper, to taste
Stuffed Eggplant Parm

Preheat oven to 350°. Spread about 1 cup marinara sauce in the bottom of a medium baking dish
- 1 1/2 1 1/2 1/2 c. marinara, divided
- 2 2 2 medium eggplants, halved
- 1 1 1 tbsp. extra-virgin olive oil
- 1 1 1 onion, chopped
- 1 1 1 tsp. dried oregano
- kosher salt
- Freshly ground black pepper
- 2 2 2 cloves garlic, minced
- 1 1 1 c. chopped tomatoes
- 1 1 1 large egg, lightly beaten
- 2 1/2 2 1/2 1/2 c. shredded mozzarella, divided
- 1 1 1 c. freshly grated Parmesan
- 1/4 1/4 1/4 c. Italian bread crumbs
- 1/4 1/4 1/4 c. basil, chiffonade
Gruyere Scalloped Potatoes

- 1 pound bacon cooked and roughly chopped
- 3 pounds Yukon gold potatoes rinsed and thinly sliced
- 4 cloves garlic minced
- 4 tbsp. butter thinly sliced
- 2 tsp. salt
- 2 tsp. pepper
- 4 sprigs fresh thyme divided
- 2 1/2 cups (10 ounces) Gruyere Cheese shredded divided
- 1 1/2 cups (298g) whipping cream
Italian Lemon Pound Cake

Pre-heat oven to 300 degrees 1
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 2 cups sugar
- 3 eggs
- 1/2 cup buttermilk
- 1/2 cup of sour cream
- 4 tablespoons lemon juice
- Zest of 2 lemons ( about 2 tbsps.)
- 1 teaspoon of vanilla
Beef Stir Fry - Oriental

Combine all sauce ingredients, whisk and set aside
- For the Sauce:
- 3 Tbsp soy sauce (I normally use Kikkoman.)
- 3 Tbsp honey
- 1 1/2 Tbsp oyster sauce
- 2 Tbsp Chinese cooking wine (or substitute with Swanson beef stock)
- 2 Tbsp water
- 1 tsp sriracha sauce
- 1/2 tsp ground black pepper
- For the Stir Fry:
- 1 1/2 Tbsp peanut oil (or vegetable oil)
- 2 garlic cloves, minced
- 1 small onion, sliced in half
- 1 lb flank steak, sliced thinly, across the grain
Sour Cream Apple Cake

- 2 cups flour
- 1/4 teaspoon salt
- 3 teaspoons cinnamon, divided
- 1/2 teaspoon nutmeg
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 cup (1 stick) softened butter
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 8 ounces sour cream
- 2 medium apples, chopped (about 2 cups)
- 8 tablespoons chopped walnuts or almonds, optional
- 1/2 cup brown sugar
Southern Fried Cornbread

Combine first 4 ingredients together in a bowl, mixing well
- 2/3 cup cornmeal
- 1/3 cup self rising flour
- 1/3 cup low fat buttermilk
- 1 large egg
- oil for frying (I used about 3 tbsps coconut oil, but you can use whatever you like)

- 2 tablespoons olive oil, drained from sun-dried tomatoes
- 1/2 pound chicken boneless, skinless (preferably, boneless skinless thighs), chopped
- salt
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon salt
- 4 roma tomatoes, chopped
- 1/4 cup fresh basil leaves, chopped
- 8 oz fresh spinach
- 3 garlic cloves, chopped
- 6 oz spaghetti or angel hair pasta
- (OPTIONAL) 3 tablespoons high quality olive oil or oil from the sun-dried tomatoes jar
