Bacon Clam Chowder

Heat slow cooker on low setting
- 1/4 cup Swanson chicken stock
- 4 cloves garlic, minced
- 1 shallot, thinly sliced
- 1 small leek, cleaned, trimmed, and sliced
- 2 ribs celery, diced
- 1 medium onion, chopped
- 2 tbsp Land O’ Lakes butter
- 2 tsp sea salt
- 1 tsp black pepper
- 3 – 10 oz cans of fancy whole baby clams, drained
- 2 cups clam juice
- 1 lb thick cut bacon, cooked crisp, and crumbled
- 8 oz Philadelphia cream cheese, softened
- 1 1/2 cups Land O’ Lakes heavy cream
- 1 tsp garlic powder
- 1 tsp dried thyme
Mediterranean Chicken Salad

Whisk together all of the marinade/dressing ingredients in a large jug
- Marinade/Dressing:
- 2 tablespoons olive oil
- juice of 1 lemon (1/4 cup fresh squeezed lemon juice)
- 2 tablespoons water
- 2 tablespoons red wine vinegar
- 2 tablespoons fresh chopped parsley
- 2 teaspoons dried basil
- 2 teaspoons garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- cracked pepper, to taste
- (1 pound | 500 g) 4 skinless, boneless chicken thigh fillets (or chicken breasts)
- Salad:
- 4 cups Romaine (or Cos) lettuce leaves, washed and dried
- 1 large cucumber, diced
- 2 Roma tomatoes, diced
- 1 red onion, sliced
- 1 avocado, sliced
- 1/3 cup pitted Kalamata olives (or black olives), sliced (optional)
- Lemon wedges, to serve
Peach Cobbler

Preheat the oven to 425 degrees F
- For the topping:
- 8 fresh peaches (peeled, pitted, and sliced into chunks)
- 3 tablespoons white sugar
- 3 tablespoons brown sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1 teaspoon fresh lemon juice
- 1 tablespoon cornstarch
- 1 1/2 cups all-purpose flour
- 3 tablespoon white sugar
- 1/4 cup brown sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter, chilled and cut into small pieces
- 1/4 cup boiling water
- To sprinkle on top:
- 1 tablespoon white sugar
- 1/2 teaspoon ground cinnamon
Lemonade Pie

- 2 (8 oz.) packages cream cheese, room temperature
- 1 (5 oz.) can evaporated milk
- 1 (3.4 oz.) box instant lemon pudding mix
- 3/4 cup frozen lemonade concentrate
- 1 graham cracker pie crust
- Lemon zest or whipped cream, optional
Jalapeño Popper Chicken

- 4 boneless, skinless chicken breasts
- 2 jalapeños, ribs and seeds removed, minced
- 1 large egg
- 1 (8 oz.) package cream cheese, room temperature
- 3/4 cup panko or seasoned breadcrumbs
- 1/2 cup mexican cheese blend, grated
- 2 teaspoons unsalted butter
- 1 teaspoon taco seasoning
- Kosher salt and freshly ground pepper, to tast
Steak Diane

Whisk together the broth, Worcestershire sauce, and mustard
- 1/2 cup beef broth
- 4 teaspoons Worcestershire sauce
- 3 teaspoons Dijon mustard
- 4 center cut beef tenderloin steaks (about 6oz each)
- salt
- 3 tablespoons butter
- 1/2 cup finely minced shallots
- 4 oz oyster mushrooms, sliced
- 2 cloves garlic, minced
- 4 tablespoons brandy
- 1/3 cup heavy cream
- Freshly ground black pepper
- 1 tablespoon minced parsley
- 1 tablespoon minced chives
Bluebery Pie Fudge

Combine blueberries, lemon juice and cornstarch in a medium saucepan over medium heat and bring to a simmer
- Fudge:
- 1 cup fresh or frozen (unthawed) blueberries
- 1 tablespoons freshly squeezed lemon juice
- 2 teaspoons cornstarch
- 1 (14 oz.) can sweetened condensed milk
- 20 oz. white chocolate
- 3 tablespoons unsalted butter, cubed, room temperature
- 1 teaspoon vanilla extract
- 1/8 teaspoon kosher salt
Aguas Frescas

- Watermelon-Lime:
- 5 heaping cups chopped watermelon
- 3 cups water
- 2/3 cup fresh lime juice
- 1/2 cup sugar
- Mango-Pineapple:
- 3 cups chopped mango
- 2 cups chopped pineapple
- 4 cups water
- 3 Tbsp sugar
- 1 Tbsp lemon juice
- Kiwi-Mint:
- 4 cups chopped kiwi (from about 8 peeled kiwis)
- 4 cups water
- 3/4 cup packed fresh mint leaves
- 3 Tbsp sugar
- opt. 1 1/2 cups vodka or Gin
Corn Dog Muffins

- 2 packages Jiffy corn bread mix
- 2 Eggland’s Best eggs
- 2/3 c. milk
- 1 c. Kraft shredded cheddar cheese
- 10 hot dogs
