JAMAICAN BANANA BREAD

Lightly spoon flour into dry measuring cups; level with a knife
- 2 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/4 cup butter, softened
- 2 large eggs
- 1 1/2 cups mashed ripe banana (about 3 bananas)
- 1/4 cup plain low-fat yogurt (or pina colada flavored!!)
- 3 tablespoons dark rum OR apple cider
- 1/2 teaspoon vanilla extract
- 1/2 cup flaked sweetened coconut
- Cooking spray
- 1 tablespoon flaked sweetened coconut
- 1/2 cup powdered sugar
- 1 1/2 tablespoons fresh lime or lemon juice
Mac and Cheese

To make the gravy, combine the milk, bay leaf, and thyme in a small saucepan and bring to a boil
- GRAVY
- 1 1/2 cups whole milk
- 1 bay leaf
- 1 sprig fresh thyme
- 2 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- CHEESE SAUCE
- 1/2 cup (1 stick) unsalted butter
- 1/2 cup all-purpose flour
- 3 cups whole milk
- 1 cup heavy cream
- 2 tablespoons dry mustard powder
- 1 tablespoon mild hot sauce, such as Frank’s Red Hot
- 1 1/4 pounds sharp white cheddar cheese, preferably Cabot, shredded
- 4 ounces processed cheese product, such as Velveeta, cubed
- 4 strips bacon

Lemon Blueberry Cake

Preheat oven to 350º and grease three 9" cake pans with cooking spray
- 118-oz. box1 18-oz. box vanilla cake, plus ingredients called for on box
- Juice and zest of 1 1/2 lemons, divided, plus more zest for garnish
- 1 3/4c.1 3/4 c. fresh blueberries, divided
- 3tbsp.3 tbsp. all-purpose flour
- 1c.1 c. (2 sticks) butter, softened
- 3c.3 c. powdered sugar
- 1/4c.1/4 c. heavy cream
- 1tsp.1 tsp. pure vanilla extract
- pinchpinch of kosher salt
- 2thin2 thin lemon slices, for topping
Chicken Marsala

Split chicken breasts through the middle to make 2 pieces
- 2 skinless, boneless chicken breasts
- salt and flour to taste
- 1/3 cup flour
- 1/2 cup olive oil
- 8 ounces mushrooms sliced and cleaned
- 1 clove garlic, minced
- 2 teaspoons shallots, minced
- 2 tablespoons butter
- 1/2 cup sweet Marsala wine
- 1/4 cup chicken stock
- 1/4 cup dry white wine
- 1 tablespoon lemon juice
- Optional: Parsley and chopped carrots for garnish
BAKED ZITI WITH HOMEMADE SAUCE

Put olive oil in a large skillet and heat it over medium heat
- 1 tablespoon olive oil
- 1 cup yellow onion , chopped
- 1 1/2 teaspoons minced garlic
- 1/2 cup red wine, such as Chianti (chicken stock or vegetable stock works as a substitute)
- 1 28-ounce can crushed tomatoes
- 1 tablespoon chopped fresh flat-leaf parsley (or 1 teaspoon of dried parsley)
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 12 ounces rigatoni, penne, or ziti pasta
- 3 tablespoons extra virgin olive oil
- 3 spicy Italian sausages, casings removed (vegetarians can replace with mushrooms or use veggie sausages)
- 1/2 yellow onion, diced
- 1 green bell pepper, seeded and diced
- 2 garlic cloves, minced
- 2 1/2 cups homemade (recipe below) or store-bought marinara
- 1 cup part-skim mozzarella cheese
- 1/2 Parmesan cheese, grated
- Salt and pepper to taste
Dill Pickle Pasta Salad

Prepare pasta according to package directions
- Dressing:
- 8 oz dry shell or orecchiette pasta
- 1 cup baby pickles, sliced into rounds
- 1/2 cup pickle juice
- 1/4 cup yellow onion, diced
- 2/3 cup cheddar cheese, shredded
- 2 tablespoons fresh dill, chopped
- 2/3 cup Greek yogurt
- 1/3 cup sour cream
- 1/3 cup pickle juice
- 1 pinch cayenne pepper
- Salt and pepper, to taste
Mississippi Roast

Place roast on a cutting board and rub the salt and pepper all over it
- 1 boneless chuck roast or top or bottom round roast, 3 to 4 pounds
- 2 teaspoons kosher salt, plus more to taste
- 1 1/2 teaspoons freshly ground black pepper, plus more to taste
- 1/4 cup all-purpose flour
- 3 tablespoons neutral oil, like canola
- 6 tablespoons unsalted butter
- 8 to 12 pepperoncini
- 2 tablespoons mayonnaise
- 2 teaspoons apple cider vinegar
- 1/2 teaspoon dried dill
- 1/4 teaspoon sweet paprika
- 1 teaspoon buttermilk, optional
- Chopped parsley, for garnish

- 8 8 8 ounces (250 g) sliced brown mushrooms
- 1 1 500 pound 500 grams fresh shrimp (prawns) without shells, washed and deveined
- 1/2 1/2 to teaspoon crushed red pepper flakes (adjust to suit your tastes)
- 1 1 1 teaspoon mild paprika (or smokey)

- 8 8 to ounces (250 g) pack cream cheese at room temperature (low fat or fat free are fine to use)
