Oatmeal Cranberry Cookies w/whole wheat flour

Preheat oven to 375 degrees
- 2 cups quick cooking oats
- 1/2 cup whole wheat flour
- 1/2 cup all purpose flour
- 1 tsp baking soda
- 6 tbsp Promise spread-stick
- 1 1/4 cups firmly packed light brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup dried cranberries
- 1/2 cup toasted finely chopped pecans
Lemon-Ginger Cheesecake

Use a processor to grind the gingersnap cookies finely for the crust
- CRUST
- 2 cups finely ground gingersnap cookies (about 9 ounces)
- 2 tbsp sugar
- 1/2 tsp ground ginger
- 1/4 cup (1/2 stick) unsalted butter, melted
- FILLING
- 4 8-oz packages cream cheese, room temperature
- 1 1/4 cups sugar
- 4 large eggs, room temperature
- 1 cup sour cream
- 1/2 cup whipping cream
- 1/2 cup finely chopped crystallized ginger
- 2 tbsp finely grated peeled fresh ginger
- 2 tbsp fresh lemon juice
- 4 tsp grated lemon peel
- Lemon slices for garnish

- 6 cups sliced zucchini, slightly cooked
- 2 tbsp flour
- 1 1/2 cups shredded cheddar cheese
- 1 tbsp butter, melted
- 2 egg yolks slightly beaten
- 1 cup sour cream
- 2 egg whites slightly beaten
- 1/4 cup fine bread crumbs
- 6 pieces bacon, fried

This can be eaten as chili
- 1 TB. olive oil
- 2 large onions, chopped
- 6 garlic cloves, minced (or 1 1/2 tsp. MINCED GARLIC)
- 1 lb. ground beef
- 1 lb. ground turkey
- 1 lb. ground pork or sausage
- 1 28 oz. jar red pasta sauce—any meatless flavor (or 1 28 oz. can tomato sauce plus 1 tsp. ITALIAN HERB MIX and 1/4 tsp. each GRANULATED GARLIC and FENNEL SEED, ground or whole)
- 1 Cup red wine
- 1 16 oz. jar salsa (or 1 15 oz. can petite diced tomatoes plus 1/2 tsp. CUMIN)
- 2 TB. REGULAR CHILI POWDER
- 1 TB. GROUND CUMIN
- 11/2 tsp. TURKISH OREGANO
- 11/2 tsp. PENZEYS FRESHLY GROUND PEPPER
- 11/2 tsp. SHALLOT SALT
- 1/2 tsp. THYME
- 1 tsp. GROUND CHIPOTLE
- 3 BAY LEAVES
- 1 lb. freshly cooked pasta
Fried Rice

Penzey's Recipe Mom has used this recipe with peas and shrimp, very tasty
- 2 tsp sesame oil, divided
- 4 cups cold cooked medium grain rice (do not use instant rice)
- 1/2 lb medium raw shrimp, or cubed tofu, leftover cooked chicken or pork
- 2 eggs, lightly beaten
- 1/4 tsp ground white pepper
- 1/4 cup minced red onion, or 2 green onions, finely chopped
- 1/4-1/2 tsp minced garlic
- 2 cups pea pods or snap peas, or peas, cutting the pods in half if large
- 3-6 TIEN TSIN CHILI Peppers, optional
- 2-3 tbsp soy sauce
- Dash hot sauce, as desired
