Sweetheart Parfaits for Two

You may substitue wine glasses for parfait glasses
- 2 jell-o chocolate sugar free pudding snacks
- 1/4 tsp. ground cinnamon
- 1/2 cup thinly sliced fresh strawberries
- 1/4 cup slivered almonds, toasted
- 2 tbsp. thawed cool whip, sugar free whipped topping
Fried Rice

On medium high heat, heat the oil in a large skillet or wok
- 3 cups cooked white rice (day old or leftover rice works best)
- 3 tbsp. sesame oil
- 1 cup frozen peas and carrots, (thawed)
- 1 small onion, chopped
- 2 tsp. minced garlic
- 2 eggs, slightly beaten
- 1/4 cup soy sauce
Hamburger Goulash

In a large skillet, brown hamburger and onion
- 1 1/2 lbs. ground beef
- 2 cans stewed tomatoes
- 1 can corn
- 1 can tomato sauce
- 1 medium onion, chopped
- 8 oz. flat noodles
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. garlic powder
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1/2 tsp. sugar
- shredded cheese (your favorite variety)
Cocktail Meatballs

Preheat oven to 350 degrees
- Meatballs:
- 1 lb. lean ground beef
- 1/2 small onion, very finely diced
- 1/2 cup bread crumbs
- 1 egg
- 1/2 tsp. pepper
- Sauce #1:
- 1/2 cup grape jelly
- 1 cup catsup
- Sauce #2:
- 10 oz. apricot preserves
- 2/3 cups barbecue sauce

- DRESSING:
- 1 pkg. (7 oz.) shell macaroni, cooked and drained
- 2 cups cubed fully cooked ham
- 1 cup chopped green pepper

- 1/4 cup chopped onion
- 1/2 cup miracle whip
- 1/4 cup grated parmesan cheese
- 2 tbsp. milk
- 14 tsp. salt

- 3 pints fresh ripe strawberries, stems removed
- 1 (1.75 oz.) pkg. Sure-Jell for lower sugar recipies fruit pectin
- 1 lb. fresh rhubarb, leaves removed
- 1/2 cup water
- 1 cup splenda no calorie sweetener, granulated
Twice-Baked Potatoes

- 2 large yukon gold potatoes
- 2 tsp. olive oil
- 1/2 tsp. salt
- 3 tbsp. milk
- 2 tbsp. butter or margarine
- 2 tbsp. sour cream

- 1/4 cup finely shredded swiss cheese
