Frozen Caramel Hot Chocolate

Add the prepared drinking chocolate with ice in a blender
- 2 servings caramel hot chocolate, prepared as directed
- 2 cups ice
- 1/4 cup caramel ice cream topping
- 1 cup non-fat cool whip
- 1/4 cup rolos, chopped in half (optional)
- 1/4 cup caramel chips (optional)
Rhubarb Icebox Dessert

In a bowl, combine 1 1/2 cups cracker crumbs and butter
- 1 3/4 cups crushed gram crackers, (about 28
- squares), divided
- 3 tbsp. butter, melted
- 1 cup sugar
- 2 tbsp. cornstarch
- 4 cups diced fresh or frozen rhubarb
- 1 pkg (3 oz) raspberry or strawberry gelatin
- 1 carton (8 oz) frozen whipped topping, thawed
- 1 1/2 cups miniature marshmallows
- 2 cups cold milk
- 1 pkg (3/4 oz) instant vanilla pudding mix
Mint Brownie Bars

CHOCOLATE TOPPING: 1/2 - 3/4 cup milk chocolate chips 6 tbsp
- MINT FROSTING:
- 1 9" x 13" brownie mix - cook as directed.
- 1 stick butter, softened
- 2 cups powdered sugar
- 1 tbsp. warm water
- 1/2 tsp. peppermint extract
- 3 drops green food coloring
- Mix together - spread on cooled brownies.
Stuffed Pepper Soup

In a large pot, brown and crumble ground beef along with diced green peppers and onion over medium-high heat
- 1 lb. ground beef
- 1 small onion, diced
- 1 large bell pepper, diced
- 1 can (28 oz.) diced tomatoes
- 1 (10 oz.) can tomato soup or tomato sauce
- 1 (14 oz.) can chicken broth
- 2 cups cooked rice
- 1 tbsp. sugar
- 1 tsp. garlic powder
- salt to taste
- pepper to taste
- shredded cheddar cheese, for topping
S'More Cupcakes

Position a rack in the middle of the oven
- 2 cups graham cracker crumbs
- 2 tbsp. sugar
- 3/4 cup (1 1/2 sticks) unsalted butter, melted
- 1 cup cut-up milk chocolate candy bars (about 6 oz.)
- 6 marshmallows
- powdered sugar for dusting
Chicken in a Pot

Put carrots, onion, and celery in bottom of crock-pot
- 2 carrots, sliced
- 2 onions, sliced
- 2 celery stalks, cut into 1" pieces
- 3 - 4 lb. whole fryer chicken
- 1 tsp. salt
- 1/2 tsp. ground black pepper
- 1/2 cup water, chicken broth or white wine
- 1/2 tsp. dried basil

Cream butter, 1 cup sugar, and brown sugar
- Combine next 3 ingredients in a bowl:
- 1 cup butter, softened
- 1 cup + 1 tbsp. sugar, divided
- 1 cup brown sugar
- 2 eggs
- 2 tsp. vanilla
- 2 3/4 - 3 cups flour
- 3/4 cup baking cocoa
- 1 tsp. baking soda
- 1 cup chopped pecans, divided
- 1 pkg. (13 oz.) rolo candies
Baked Potato Casserole

Place the potato chunks into a large saucepan
- 8 medium potatoes, about 3 lbs., peeled & cut into 1" chunks
- 1 cup evaporated 2% milk
- 1/2 cup light sour cream
- 1 tsp. salt
- 1/2 tsp. ground black pepper
- 2 cups shredded cheddar cheese, divided
- 6 slices turkey bacon, cooked until crispy & crumbled
- sliced green onions
Berry Trifle

Prepare pudding mix according to package directions using the milk; set aside
- 1 4 serving-size pkg. instant vanilla pudding mix
- 2 cups milk
- 1 8 oz. pkg. cream cheese, softened
- 1 6 oz. container vanilla yogurt
- 1 10.75 oz. frozen loaf pound cake, thawed and cubed
- 6 cups strawberries, quartered
- 2 cups blueberries and/or raspberries
- 1 recipe Berry Sauce
