Mix all of the ingredients together and scoop into shot cups
- 1 small pkg. any flavor chocolate pudding
- 1 8 oz. pkg. cool whip, thawed
- 3/4 cup milk or skim milk
- 1/2 cup bailey's irish cream
- 1/2 cup butterscotch schnapps
Twice-Baked Sweet Potatoes

Heat oven to 425 degrees. Cut potatoes lengthwise in half; place, cut-sides down, in foil-lined pan
- 2 large sweet potatoes
- 2 oz. Philadelphia neufchatel cheese, cubed
- 2 tbsp. fat-free milk
- 1 tbsp. brown sugar
- 1/4 tsp. ground cinnamon
- 1/4 cup chopped peanuts
Marinated Cucumber Salad

Combine cucumbers, onions, carrots and celery in large bowl
- 2 medium cucumbers, thinly sliced
- 1 medium onion, in rings
- 1/2 cup carrots, thinly sliced
- 1/2 cup celery, chopped
- 1 cup vinegar
- 2 tbsp. vegetable oil
- 2 tsp. sweet and low
- 1 tsp. celery seed
- 1 tsp. salt
- 1/2 tsp. pepper
