- For the Crust:
- 2 cups almond flour
- 3 tablespoons coconut flour
- 1/2 teaspoon Celtic sea salt
- 1/2 teaspoon unflavored grass-fed gelatin
- 2 tablespoons coconut sugar, maple sugar or sucanat
- 1 large egg yolk
- 8 tablespoons unsalted butter or ghee, cold, cut into tablespoons
- For the Apple Filling:
- 2 tablespoons unsalted butter or ghee
- 5 Granny Smith apples, peeled, cored and cut into 1/4-inch thick slices
- 4 Pink Lady or Gala apples, peeled, cored and cut into 1/4-inch thick slices
- 1/4 cup coconut sugar
- 1/2 teaspoon cinnamon
- 1/8 teaspoon Celtic sea salt
- 1/2 cup coconut milk or heavy cream
- For the Topping:
- 1 cup almond flour
- 2 tablespoons coconut flour
- 1 tablespoon arrowroot flour
- 1/2 teaspoon unflavored gelatin
- 1/3 cup coconut sugar
- 6 tablespoons unsalted butter or ghee
Chicken Mozzarella

Family Favorite Recipe! Don't remember where I originally got the recipe years ago
- 16 boneless Chicken Thighs (or 6-8 boneless breasts cut in 1/2 or 1/3)
- 1 cup flour (can use gluten-free)
- 1/4 cup grated Parmesan cheese
- 1 Tbsp Italian Seasoning
- 1 1/2 tsp Paprika
- 1/2 tsp black pepper
- 12 ounces Chili Sauce, or more (I sometimes use 2 bottles)
- 2 cup shredded Mozzarella Cheese

1. Preheat the oven to 400°F (200°C)
- Crust:
- 4 4 4 eggs
- 6 6 6 oz. shredded cheese, preferably mozzarella or provolone
- Topping:
- 3 3 3 tablespoons tomato paste
- 1 1 1 teaspoon dried oregano
- 5 5 5 oz. shredded cheese
- 1 1/2 1 1/2 1/2 oz. pepperoni
- olives
- For serving:
- 5 5 5 oz. leafy greens
- 4 4 4 tablespoons olive oil
- sea salt and ground black pepper
Crock Pot Beef Pot Roast (GF,Low Carb)

Adapted from recipe in Better Homes and Gardens Cookbook
- 4 pound Chuck Roast
- 2 Tbsp Coconut Oil (or melt trimmings from meat)
- 6 Carrots, cut in 1 1/2 inch pieces (*I use more--fill bottom of pot)
- 1 large Onion, cut in large chunks
- 1 cup Beef Broth (or chicken broth or water)
- 1/2 tsp black pepper
- 1 tsp salt, or to taste
- 3 cloves Garlic, minced
- 1 tsp dried Oregano or Basil, optional

1. In a sprayed 10x15 baking dish, combine the water & rice
- 8 pork chops
- 3 Tbsp oil
- 3 cup water
- 2 cup brown rice
- 16 oz tomato sauce (or salsa)
- 4 Tbsp taco seasoning
- 4 oz green chilies, chopped
- 2 cup cheddar cheese
Real Healthy Mexican Style Cauliflower Rice

Preheat the oven to 350 degrees F
- 1 head organic cauliflower
- 2 small tomatoes, chopped
- 1/2 an onion, chopped
- 2 garlic cloves, minced
- 1 Tablespoon tomato paste
- dash of salt and pepper
- dash of Tajin or red pepper flakes
- 1/4 cup fresh, cilantro, chopped
- juice from one lime

- 2 eggs

- 1/2 cup pizza sauce
- 1 1/2 cups shredded mozzarella cheese
- toppings - pepperoni, ham, sausage, mushrooms, peppers

- 2 1/2 lbs thawed and drained boneless beef or venison strips, or boneless chicken breasts cut into strips (or try combination of chicken and beef)
- 3 large green bell peppers, cut into strips

- 1 (14 1/2 oz) cans diced tomatoes, drained
