- 4 c. all-purpose flour
- 3 c. sugar
- 1 lb. butter, softened
- 3/4 c. milk
- 6 large eggs
- 2 tsp. vanilla extract
Spicy Creamed Corn With Bacon And Scallions

Cook bacon in large skillet over medium-high heat until crisp, 8 to 10 minutes
- 6 slices bacon, chopped
- 3 medium shallots, minced
- 5 medium ears corn, (about 3 cups kernels)
- 2/3 c. heavy cream
- pinch cayenne pepper
- 2 medium scallions, sliced thin
- salt and pepper

For sponge cake: Sift together four, baking powder, and salt
- Sponge cake:
- 1 cup sifted flour
- 1 T baking powder
- 1/4 tsp. salt
- 1/2 cup milk
- 2 T butter
- 1 tsp. vanilla
- 2 eggs
- 1 cup sugar
- Remaining trifle ingredients:
- 1 3 oz. package jello, made according to package directions (cherry, raspberry, strawberry, lemon)
- 1 cup whipping cream
- 1 3.25 oz. package of instant vanilla pudding made according to directions
- 4 cups 1 kind of fruit or 2 cups each of 2 kinds of fruit (raspberries, cherries, strawberries, oranges, fruit cocktail)

- 3 medium tomatoes, diced
- 1/4 c. thinly sliced pitted green olives
- 1 lime, cut into 4 wedges

- Garnish:
- 1 1/4 c. Graham cracker crumbs
- 1/4 c. firmly packed light brown sugar
- 1/3 c. butter, melted
- 2 (14-oz.) cans sweetened condensed milk
- 1 c. fresh key lime juice
- 2 egg whites
- 1/4 tsp. cream of tartar
- 2 tbsp. sugar

Quick Pickles

Place cucumber slices in a colander set in the sink
- 1 1/4 lb. pickling cucumbers, trimmed and cut into 1/4-inch slices
- 1 1/2 tsp. salt
- 1 c. elder vinegar
- 1 c. white vinegar
- 1 c. light brown sugar
- 1 c. slivered onion
- 2 cloves garlic, silvered
- 1 tsp. dill seed
- 1 tsp. mustard seed
Milk Punch

Combine all ingredients in a blender or mixer
- 8 C vanilla ice cream
- 3/4 C bourbon
- 4 t. vanilla
- 4 t grated bittersweet chocolate
- 1/2 t ground cinnamon

Grilled Mahimahi With Peach And Pink Grapefruit Relish

Prepare grill. Place vinegar and sugar in a small saucepan, bring to a boil
- 1/3 c. rice vinegar
- 2 tbsp. brown sugar
- 1/2 c. finely chopped red onion
- 2 1/2 c. diced peeled ripe peaches (about 1 1/2 lb.)
- 1 1/2 c. pink grapefruit sections (about 1 large grapefruit)
- 1/2 c. small mint leaves
- 3/4 tsp. salt, divided
- 1/2 tsp. black pepper, divided
- 6 (6 oz.) mahimahi or other firm whitefish fillets (about 3/4 inch thick)

For dressing, zest limes to measure 1 teaspoon zest; juice limes to measure 1/4 cup juice
- Dressing:
- 2 limes
- 2 tbsp. sugar
- dash of salt
- 2 tbsp. vegetable oil
- Salad:
- 1 firm, ripe avocado, peeled, seeded and sliced
- 2 cups torn romaine lettuce
- 1 large orange, peeled and cut into sections
- 1/4 small red onion, sliced into thin wedges
- 2 tbsp. snipped fresh cilantro (optional)

- 1/2 cup plain dried bread crumbs
- 1/4 cup chopped flat-leaf parsley
- 2 large eggs, lightly beaten
- 2 tablespoons whole milk
- 1/2 cup grated Romano
- 1/4 cup chopped sun-dried tomatoes
- 3/4 teaspoon salt
- 3/4 teaspoon freshly ground black pepper
- 1 pound ground turkey, preferably dark meat
- 10 ounces sliced pancetta, about 10 slices
- 3 cups arugula, about 3 ounces
- 1 cup mayonnaise
