Eating Well Sloppy Joes

Crumble beef into a large nonstick skillet; cook over medium heat until it starts to sizzle, about 1 minute
- 12 oz. 90 percentage-lean ground beef
- 1 large onion, finely diced
- 2 c. finely chopped cremini mushrooms (about 4 oz.)
- 5 plum tomatoes, diced
- 2 tbsp. all-purpose flour
- 1/2 c. water
- 1/4 c. cider vinegar
- 1/4 c. chili sauce, such as Heinz
- 1/4 c. ketchup
- 8 whole-wheat hamburger buns, toasted if desired
Gorgonzola Sauce

In a saucepan, heat the half & half, heavy cream and vegetable base on medium heat until hot (not boiling)
- 8 ounces Gorgonzola cheese (crumbled)
- 3 tablespoons butter
- 2 tablespoons flour
- 2 1/2 cups half & half
- 2 1/2 cups heavy cream
- 1 tablespoon vegetable base
- 3/4 cup Romano cheese (grated)
- 1/8 tsp. ground black pepper
- 1 egg yolk (tempered)
Strawberry Pretzel Salad

Preheat oven to 400 degrees F
- 2 c. crushed pretzels
- 3/4 c. butter, melted
- 3 tbsp. white sugar
- 1 (8 oz.) package cream cheese, softened
- 1 c. white sugar
- 1 (8 oz.) container frozen whipped topping, thawed
- 2 (3 oz.) pkgs. strawberry flavored gelatin
- 2 c. boiling water
- 2 (10 oz.) packages frozen strawberries

- 1 1/2 c. all-purpose flour
- 1 1/2 c. oat bran
- 1 tsp. baking soda
- 1 1/2 tsp. cinnamon
- 3/4 tsp. allspice
- 1/2 tsp. kosher salt
- 8 tbsp. (l stick) unsalted butter, at room temperature, plus more for serving (if desired)
- 1/3 c. sugar
- 2 large eggs
- 1 c. sour cream
- 1/3 c. molasses

- 1 (12 oz.) package crispy corn and rice cereal
- 5 oz. slivered almonds
- 6 oz. toasted, chopped pecans
- 3/4 c. butter
- 3/4 c. dark corn syrup
- 1 1/2 c. light brown sugar
Chicken Gorgonzola

In a large skillet, heat the Gorgonzola sauce and onions on medium heat and stir until warm (about 10 minutes)
- 2 pounds chicken strips (Tyson, Sam's refrigerated, or grilled breast strips)
- 4 cups Gorgonzola sauce
- 8 ounces sliced carmelized onions (1 cup)
- 12 ounces frozen baby spinch (freeze a package of fresh spinach, not frozen spinach!)
- 1 pound penne pasta (precooked, two minutes less than regular time, add 1-2 T of oil, toss and freeze to make ahead)
Master Recipe For Mashed Potatoes

Put potatoes in a large saucepan; add cold water to cover and 1/2 teaspoon salt
- 2 lb. Russet or Yukon Gold potatoes, peeled, eyes and blemishes removed; cut into 2 inch chunks
- 3/4 tsp. salt, total
- 6 tbsp. butter, softened
- 1 c. whole milk or half-and-half, warm
- ground black pepper to taste
Thai-Style Chicken Salad with Spicy Peanut Dressing

1. Season the chicken with salt and pepper
- 3 - 3 1/2 pound whole chicken
- Table salt and ground black pepper
- 1/2 cup canola oil
- 3 tablespoons smooth peanut butter
- 1/2 cup fresh lime juice from 3 to 4 limes
- 2 tablespoons water
- 3 small cloves garlic , minced or pressed through garlic press (about 1 1/2 teaspoons)
- 2 teaspoons finely grated fresh ginger
- 2 tablespoons light brown sugar
- 1 1/2 teaspoons hot red pepper flakes
- 1/2 medium cucumber , peeled, seeded, and cut into 1 inch by 1/4-inch matchsticks (about 1 cup)
- 1 medium carrot , peeled and grated on large holes of box grater (about 1/2 cup)
- 4 scallions , white and green parts, sliced thin
- 3 tablespoons minced fresh cilantro leaves
