Cheesy Stuffed Shells

Preheat the oven to 350. Bring a large pot of salted water to a boil
- For the Sauce:
- Kosher salt
- 2 tablespoons extra-virgin olive oil
- 1/2 cup grated carrot
- 1/2 cup grated zucchini
- 1 small onion, finely chopped
- 1/2 cup chopped celery
- 3 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 2 tablespoons tomato paste
- 1 28-ounce can crushed tomatoes
- Freshly ground pepper
- For the Shells:
- 1 12-ounce box jumbo pasta shells
- 8 ounces silken tofu, mashed
- 1 10-ounce box frozen chopped spinach, thawed and squeezed dry
- 1 1/2 cups cottage cheese
- 1/2 cup grated parmesan cheese
- 1 1/2 cups shredded mozzarella cheese
- 1 large egg, lightly beaten
- 1 clove garlic, minced
- Kosher salt and freshly ground pepper
- Cooking spray
Greek Chicken

Flatten chicken. Combine feta, lemon juice and oregano
- 1 lb. boneless chicken
- 1 c. crumbled feta cheese
- 1/2 tsp. dried oregano (0.5 g)
- 1 tbsp. lemon juice (1.3 g)
- 1 tbsp. oil
- salt and pepper to taste
- 1 c. chicken broth
- 1/2 c. tomato diced (5.8 g)
- 1 c. fresh spinach (2.4 g)

- 1 c. white sugar
- 1/2 c. butter
- 3/4 c. all-purpose flour

- 1 large egg
- 2/3 cup finely chopped shallots
- 1 tablespoon chopped flat-leaf parsley
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 2 cups shredded seeded summer squash, (2-3 medium, about 1 pound; see Tip)
- 1/2 cup freshly grated Parmesan cheese

- 1/2 c. breadcrumbs
- 1 tbsp. fresh chopped parsley
- 5 tbsp. butter
- 1 celery stalk minced
- 1/2 small onion minced
- 1 tbsp. flour

- 1/2 tsp. Creole seasoning (Tony Chachere’s)
- 1/2 c. milk
- 8 oz. crabmeat
- 1 tbsp. fresh lemon juice
