1. Mix your water and taco seasoning together and pour over your cooked ground beef
- 1 1 1 lb ground beef- browned and drained
- 1 1 1 envelope Taco Seasoning
- 1/2 1/2 1/2 cup water
- 1 15 1 15 1 15 oz can pork and beans
- 1 11 1 11 1 11 oz can mexicorn- drained
- 1 10.75 1 10.75 1 10.75 oz can cheddar cheese soup
- 1 1 1 cup milk
- 2 2 2 cups shredded cheese I used mozzarella
- 2 2 2 cups crushed Chili Cheese Fritos

1. Preheat the oven to 350°F
- 1 1/2 pounds ground beef
- 1 cup plain unseasoned bread crumbs
- 3 large eggs, lightly beaten
- 3 tablespoons milk
- 1 garlic clove, finely chopped
- 1 medium onion, finely chopped
- 1 1/4 teaspoons salt
- 1 teaspoon minced fresh thyme
- 3/4 teaspoon freshly ground black pepper
- 3 tablespoons ketchup

1. Brown the meat in a skillet over medium-high heat
- 1 pound ground beef or chicken
- 1 ounce taco seasoning mix
- 2 cans (4 ounces each) green chiles
- 1 can (16 ounces) refried beans
- 1 can (10 3/4 ounces) cream of mushroom soup
- 1 can (10 3/4 ounces) cheese soup
- 1 can (15 ounces) enchilada sauce, divided
- 4 cups shredded Mexican cheese blend, divided
- 10 corn tortillas, quartered
Black Beans, Corn, and Yellow Rice

1. Bring rice, water and olive oil to boil in saucepan over high heat
- 1 (8 oz.) package yellow rice mix (Zatarains)
- 1 1/4 cups water (or Chicken Broth in place of water)
- 2 tbsp. olive oil
- 1 (15 oz.) can black beans, rinsed and drained
- 1 (15.25 ounce) can whole kernel corn, drained
- 2 tsp. lime juice
- 1 tsp. ground cumin

Easy Ground Beef Gyros

1. In small bowl, combine Yogurt Sauce ingredients, mixing well
- 1 lb. lean ground beef
- 4 plum tomatoes, thinly sliced
- 8 small pita pocket bread, cut in half, warmed
- SEASONING
- 1 garlic clove, crushed
- 1/2 teaspoon dried oregano leaves
- 1/4 teaspoon pepper
- SAUCE
- 2/3 cup plain low-fat yogurt
- 1/3 cup cucumber, chopped
- 3 tablespoons onions, finely chopped
- 2 teaspoons fresh parsley, chopped
Beef Taco Foldovers

1. Heat oven to 375°F. 2
- 1/2 lb lean (at least 80%) ground beef
- 1/4 cup chopped onion
- 1/2 cup black beans, drained (from 15-oz can)
- 1 can (8 oz) tomato sauce
- 1 tablespoon Old El Paso® taco seasoning mix (from 1 oz package)
- 1 can (10.2 oz) Pillsbury® Grands!® flaky layers refrigerated original biscuits
- 1 cup shredded Cheddar cheese (4 oz)
- 5 tablespoons Old El Paso® salsa
- 5 tablespoons sour cream
- Sliced green onions, if desired
- Lettuce, if desired
Reduced Fat Alfredo Sauce

1. The key here is patience, add all ingredients gradually! 2
- 1 cup 1% low-fat milk (skim may be used, but creates a thinner sauce)
- 1 1/2 tablespoons butter
- 1 1/2 tablespoons flour
- 3 tablespoons parmesan cheese (add extra!)
- 1/2 teaspoon minced garlic (add extra!)
- 1 dash pepper
- SUGGESTION: Add thyme for additional flavor!
