Jerry's Italian Lettuce Salad

1. Tear romaine lettuce into bite sized pieces and put in large bowl
- 1 head romaine lettuce
- 1/4 cup olive oil
- 3 tablespoons red wine vinegar
- 1/4 cup parmesan cheese
- 2 tablespoons Dijon mustard
- 1 teaspoon minced garlic
- 1/4 cup Italian breadcrumbs
- 1 (6 1/2 ounce) jar artichoke hearts, quartered (not marinated)
- 1 (2 ounce) jar pimientos
- 1/4 large red onion
Oven-Baked Beignets

1. Prepare Beignets: Place warm water in small bowl; sprinkle with yeast and 1 teaspoon granulated sugar
- BEIGNETS
- 1/4 cup warm water (105°F to 115°F)
- 1 pkg. quick-rising active dry yeast
- 1/4 cup granulated sugar
- 3 cups all-purpose flour
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 4 tablespoons cold butter or margarine, cut up
- 3/4 cup low-fat buttermilk
- 1 large egg
- 1/4 cup confectioners sugar
- CAFE AU LAIT DIP
- 1/3 cup granulated sugar
- 2 tablespoons plus 1 teaspoon instant espresso powder
- 1 tablespoon plus 1 teaspoon cornstarch
- 2 cups whole milk
- 1-1/2 oz. unsweetened chocolate, finely chopped
Red Velvet Pancakes with Cream Cheese Glaze

Preheat an electric non-stick griddle to 350 degrees
- PANCAKES:
- 2 cups all-purpose flour
- 3 Tbsp cocoa powder
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 cups milk
- 2 Tbsp white vinegar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 1/2 Tbsp red food coloring
- 2 tsp vanilla extract
- 1/3 cup salted butter, melted
- CREAM CHEESE GLAZE:
- 6 oz cream cheese, softened
- 6 Tbsp butter, softened
- 2 cups powdered sugar
- 1/2 cup milk, plus more if desired
- 1/2 tsp vanilla extract
- OPTIONAL: Raspberries (for garnish)
Creamy Mushroom Ham Pasta

1. In large frying pan add olive oil, mushrooms, parsley, oregano and water; cook "almost covered" on medium heat...
- 2 tablespoons olive oil
- 1 1/4 cups chopped mushrooms
- 1 tsp. dried parsley or 3 or 4 sprigs fresh
- 1 tsp. oregano
- 1/4 cup water
- 1 cup chopped ham
- 1 cup heavy cream
- 1 tbsp. flour
- 3 cups cooked short pasta (about 6 oz.)
Lemon Burst Cookies

If you like lemon, you will LOVE these cookies
- 1 (18.25-ounce) package lemon cake mix
- 2 eggs
- 1/3 cup vegetable oil
- Zest of 2 lemons
- 2 Tablespoons lemon juice
- 1/2 teaspoon lemon extract
- 1/3 cup confectioner’s sugar
Taco Soup

1. Brown beef and onion. Add Taco Seasoning and stir all together
- 1 lb. Ground Beef
- 1 Small Onion, chopped
- 6 green onions with the chives
- 1 Packet Taco Seasoning Mix (Hot or Mild)
- 1 Packet Hidden Valley Ranch Salad Dressing Dry Mix
- 1 Can Pinto Beans
- 1 Can Kidney Beans
- 1 Can Whole Kernel Corn
- 1 Can Black Beans
- 1 Small Can Green Chiles (Hot or Mild)
- 1 16 oz. can chopped tomatoes
- 1 15 oz. can Tomato Sauce
- 2 Cups Water
Spicy Chicken Rigatoni

1. In a sauté pan, heat oil over medium heat
- OPTIONAL:
- 1 tbsp. extra virgin olive oil
- 1 tbsp. minced garlic
- 1/2 tbsp. crushed red pepper
- 1/2 tsp. ground black pepper
- 8 oz. chicken (pre-cooked roasted chicken is great)
- 1 1/2 cups "red" pasta sauce (I used Garlic and Herb in jar)
- 1 1/2 cup Alfredo sauce
- 3/4 - 1 cup peas (frozen)
- 1 lb Rigatoni pasta, cooked according to package directions
- Garnish with Parmesan Cheese or Crushed Red Pepper
Meringue Ghosts

Meringue Ghosts are haphazard mounds of sweetened meringue studded with cute little candy eyes
- 4 large egg whites
- 1/2 teaspoon cream of tartar
- 1 cup superfine or caster sugar (if you don't have superfine sugar simply take 1 cup granulated white sugar and process it for about 30 seconds in a food processor)
- 1/2 teaspoon pure vanilla extract

1. Heat oven to 375°F. 2
- 1 package (1 oz) Old El Paso® taco seasoning mix
- 2/3 cup water
- 1 1/2 cups Old El Paso® Thick 'n Chunky salsa
- 1 lb lean (at least 80%) ground beef, cooked, drained
- 1 can (16.3 oz) Pillsbury® Grands!® biscuits
- 1 cup shredded Monterey Jack cheese or Mexican cheese blend (4 oz)
- 1 cup sour cream, if desired
PHILADELPHIA Chocolate-Vanilla Swirl Cheesecake
