Cran-Apple Muffin Cake

Instead of making muffins make these in a cake form
- Glaze:
- 2 1/4 c flour
- 1/2 c sugar
- 1/2 c finely chopped pecans
- 1 T baking powder
- 1 c peeled, cored, chopped tart apples
- 1/2 c butter, melted
- 3/4 c milk
- 1 egg
- 1 teas vanilla
- 1 c cranberries, coarsely chopped
- 1/2 c powdered sugar
- 2 to 3 teas milk
Sour Cream Apple Pie

- Topping:
- 1 unbaked pie shell
- 2 eggs
- 2 T flour
- 1/8 T salt
- 3/4 c sugar
- 1 c sour cream
- 1/2 teas vanilla
- 3 c sliced apples

Honey-Orange Pork Tenderloin

An easy weeknight dinner to cook and doesn't take a lot of time
- 1/3 c orange marmalade
- 3 T cider vinegar
- 3 T soy sauce
- 1 1/2 T minced fresh garlic
- 1 1/2 teas honey
- 2 T olive oil
- 1-1 lb pork tenderloin, trimmed
- 1/4 teas kosher salt
- 1/2 teas freshly ground black pepper
Chicken A L'Orange

Chicken cooked on a bed of shallots with an orange sauce over it
- 8 shallots, peeled and halved lengthwise
- 2 T olive oil
- Kosher salt and pepper
- Chicken pieces of one chicken or your favorite parts, I use thighs, wings & breasts

- 1 T white wine vinegar
- 1 T fresh rosemary

Bacon-wrapped Pork Tenderloin

- For sauce:
- 1 pork tenderloin (1 1/4 lbs.)
- 1/4 cup Dijon mustard, divided
