Ingredients

  • 6 cups sliced okra (or less if you have to purchase)
  • 1 sweet onion, chopped
  • 2 qts. Home canned tomatoes or purchase high-quality canned tomatoes
  • 1 can Rotel diced tomatoes/chiles
  • 3 cups frozen whole corn kernels
  • 1 T sugar
  • 1 t salt
  • 1 t pepper

Preparation

Step 1

In a large pot combine okra, onion, canned tomatoes, Rotel tomatoes/chiles, sugar, salt and pepper. Bring to a boil then cover and simmer over low heat until okra is almost tender. Add corn, bring back to a boil and simmer for about 20 minutes or until okra is completely tender.
