Spinach Salad with Warm Dressing

Cook eggs: cover with water, bring to a boil, then turn off heat and allow to sit in water for 20 minutes
- 3 whole Eggs
- 4 T olive oil
- 1 whole Red Onion, Small
- 8 ounces, weight Baby Spinach, Washed Dried And Stems Removed
- 3 Tablespoons Red Wine Vinegar or White Balsamic Vinegar
- 2 teaspoons coconut sugar (or to taste)
- 1/2 teaspoon Dijon Mustard
- 1 dash Salt
Poached Eggs over Spinach

- 1 Cup Tomato diced
- 6 Cups Chopped or Baby Spinach (stems removed)
- 4 Organic Large Eggs
- 1 Pinch Sea Salt and/or Pepper
- 1/2 Tablespoon Fresh Thyme
- 1 Splash Extra Virgin Olive Oil

- 3 pound flat cut corned beef brisket with seasoning packet
- 4 cups beef broth
- 1 large onion, quartered
- 8 cloves garlic
- 6 medium red potatoes, quartered
- 3 large carrots, cut into 2-inch pieces
