Macaroni, Cheese, and Sausage

  • 1 lb. ground sausage
  • 1/2 cup onion, diced
  • 12 oz. elbow macaroni
  • 1/2 cup milk
  • 4 eggs, beaten
  • 1/2 stick butter
  • 4 cups shredded cheddar cheese (reserve 1/2 for topping)
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper

Step 1

Brown sausage and onions together in a frying pan on medium heat. Remove and drain on paper towels. In a large saucepan, cook macaroni according to package directions. Drain and return to saucepan. Add milk, beaten eggs, butter and cheese and stir until blended. Cook on low heat until all cheese is melted. Add onions and sausage and gently fold together. Place mixture in a greased 9 X 13 baking dish. Cover with foil and bake at 350 for 45 minutes. Uncover and sprinkle hot casserole with 1/2 cup shredded cheese.
