Chicken and Rice Soup

Bring broth to a boil, add chicken and cook until done
- 1 whole chicken or roasting hen or 4-6 chicken breasts
- 4 qts chicken broth
- 1 pkg. frozen mixed vegetables (corn, peas, carrots, green beans)
- 1 onion, chopped
- 4 cloves garlic, chopped
- 1 1/4 cups uncooked rice
- 2 tsp salt
- 2 cups milk
- 1/2 cup cornstarch
Roasted Parsnips and Sweet Potatoes with Honey-Pecan Drizzle

Method: Preheat oven to 400°F
- 2 pounds sweet potatoes, peeled and cut into 1-inch chunks
- 2 pounds parsnips, peeled and cut into 1-inch chunks
- 1 bay leaf
- 3 tablespoons extra virgin olive oil
- Salt and pepper to taste
- 1 cup orange juice
- 1/3 cup honey
- 2 tablespoons brown sugar
- 1/2 cup pecans, toasted and chopped
- 1/4 cup chopped parsley
Turkey Breast - Instant Pot

RULE OF THUMB FOR POULTRY in INSTANT POT Six minutes per pound, plus two minutes
- 6.5 lb. bone-in, skin-on turkey breast
- Salt and pepper, to taste
- 1 (14 oz.) can turkey or chicken broth
- 1 large onion, quartered
- 1 stock celery, cut in large pieces
- 1 sprig thyme
- 3 tablespoons cornstarch
- 3 tablespoons cold water

- 6 green onions, thinly sliced
- 1 pkg. (3 oz.) OSCAR MAYER Real Bacon Bits, divided
- 2 cups KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA, divided
Blackberry Cheesecake - Pioneer Woman

Preheat oven to 350 degrees
- Crust:
- 1 box Vanilla Wafers
- 1/2 cup Pecans
- 1 stick 1/2 Cup Butter, Melted
- 1-1/2 teaspoon Vanilla
- Filling:
- 3 packages 8 Ounce Cream Cheese
- 1-1/2 cup Sugar
- 4 whole Eggs
- 1/2 cup Sour Cream
- Topping:
- 2 cups Blackberries
- 1/2 cup Sugar
- 2 Tablespoons Water

- 1 clove garlic, minced
- 1/2 yellow onion, sliced
- 1 (13.5-ounce) can coconut milk
- 1/2 red bell pepper, sliced
- 1/2 cup fresh green beans and or sliced carrots
- 1 tablespoon brown sugar
- Salt & pepper, to taste
- 1/2 small deli-roasted chicken, warmed, cut up
- Juice of 1/2 a lime
- Fresh Thai basil

- 1 teaspoon coarsely ground black pepper
