- 2 lbs ground beef or turkey (at least 90% lean)
- 3 tsp minced garlic
- 1 large Yellow onion, diced
- 3 cups beef broth
- 2 (15-ounce) cans tomato sauce
- 1 (15-ounce) cans diced tomatoes (I use Ro-tel tomatoes)
- 1 16-oz pkg frozen corn
- 1 T Italian seasoning
- 1 T Adobo Seasoning
- 3 bay leaves
- 1 T seasoned salt
- 1/2 T black pepper
- 2 cups elbow macaroni, uncooked
- 1 cup shredded Mozzarella Cheese
- 1/2 Cup Shredded Cheddar Cheese

- 4 cups (1 lb) fresh jalapeno peppers, sliced
- 1 large red sweet bell pepper cut into strips
- 1/2 cup chopped onion
- 1 T pickling salt
- Crushed ice
- 1 1/4 cup sugar
- 1/2 cup cider vinegar
- 1 tsp mustard seeds
- 1/2 tsp celery seeds
- 1/2 tsp ground turmeric

- sliced crosswise into 1/8" pieces
- 1/2 cup low-sodium chicken broth

- 2 cloves garlic, minced
- 2 teaspoons fresh grated ginger
- 4 1/2 teaspoons vegetable oil
