Ingredients

  • 1/2

    cup golden raisins

  • 2

    tablespoons sherry vinegar

  • 2

bunches Swiss chard, preferably rainbow, stems removed, leaves sliced

  • 1

    red onion, sliced

  • 1/4

    teaspoon sea salt

  • 1/4

    cup walnuts, toasted and chopped

Directions

Put raisins and vinegar in a small bowl with 1/4 cup boiling water. Set aside to let soak 10 minutes. In a pot large enough to hold chard, saute onion until golden; drain and add soaked raisins. (Reserve liquid.) Stir and heat through. Remove raisins and onions from pot. Pour in liquid drained from the raisins and let it reduce until half the volume. Turn heat to high and add chard. When wilted and still green add the raisin/ onion mixture.
