Paleo Pizza

If you have a pizza stone use it
- crust:
- 1 cup almond meal (trader joes)
- 1 egg
- 1 tsp olive oil
- 1 T minced sun dried tomato
- 2 tsp Italian seasoning
- sauce:
- 1 can tomato sauce 8oz (low sodium)
- 1/2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
- toppings:
- Quartered artichoke hearts
- Pck of bella mushrooms
- bits of cooked chicken or cooked Italian turkey sausage opr bacon
- and whatever other toppings you want
Paleo Chard with Tomatoes

Trim coarse leaves and thick center ribs from chard; cut tender stems and leaves into 1/2-inch slices
- 1 lb red swiss chard or green swiss chard or any chard for that matter
- 3 tablespoons extra-virgin olive oil
- 3 cloves garlic, minced
- 1 can fire roasted tomatoes,
- crushed red pepper flakes to taste
- lemon squeezed on top if you want
Paleo Spinah Shitake Souffle

Chop up the raw bacon and get it cooking in the pan
- 5 oz organic baby spinach - finely chopped (basically 2 big handfuls of leaves)
- 2 slices bacon - chopped
- 4 shitake mushrooms - chopped
- 1 Cup grated celery root (can leave it out if you can't find it...)
- 2 Scallions (green onions)or some onions if you want chopped
- 4 Eggs and 10 egg whites (don't bitch.. they're cheap ;-) *
- Celery salt - few shakes
- 1/2 Cup Coconut Milk (Thai Kitchen if you can find it)
- 1/4 Avocado - sliced (garnish)
- 10 Pecan halves - chopped (garnish)
- 1 tsp coconut oil (garnish)
Paleo Chicken W Wine, Bacon and FIre Roasted Tomato Sauce

1. Snip bacon into 1/2 inch pieces using kitchen scissors 2
- 4 thick strips of bacon
- 4 chicken breasts cut into thirds
- 4 cloves garlic, minced
- 2 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp red pepper flakes (optional)
- 28 oz can crushed tomatoes
- 1/4 cup red wine

heat oil in large skillet add chicken and brown remove chicken add remaining ingredients add bake chicken and b
- 2 lbs chicken breast cut in cubes
- 1-2 tbsp olive oil/ or coconut oil
- 1 garlic clove crushed
- 1/4 tsp ginger
- 3/4 tsp red pepper flakes
- 1/4 cup apple juice
- 1/3 cup brown sugar or coconut sugar
- 2 tbsp ketchup
- 1 tbsp cider vinegar
- 1/3 cup soy sauce
- add water as needed
Paleo Pecan and Garlic Pork Chops

Preheat the oven to 400F and prepare the butternut (dice it) and apples (coarsely dice 'cause they cook FAST)
- 12 oz Pork Cutlet – 70g P, 6 g F (Costco - enough for an army)
- 1/3 Cup Pecan Pieces – 4 g C, 21 gm F (Trader Joe's)
- 1 egg – 7 gm P, 5 gm F
- 1 clove (2 tsp) garlic
- Sea Salt/Pepper/ whatever
- 2 Tsp Spool Olive Oil – 10 gm F
- 1/4 Cup finely chopped chives or green onions.
- 14 oz Cubed Butternut Squash – 46 gm C (sometimes cubed at TJ's)
- 11 oz apples – 43 gm C (I used Gala from Costco - sOOOO good)
- Cinnamon
- 2 Cups Spinach (greens) – 2 gm C
Paleo Bacon Shitake Lamb Chops w/ Walnut Guacamole

Preparing the lamb and mushrooms: Trim lamb meat off the bone - lose the fat
- LAMB:
- Enough Lamb Chops to yield 12 oz meat - I buy it at Costco and trim the meat off the bone. It's from down-under - darn good.
- 1 Full Cup sliced shitake mushrooms
- 1 green onion - finely chopped
- 2 slices bacon
- 1 sprig fresh rosemary - finely chopped
- 2 tablespoon olive oil - 1 for lamb, one for mushrooms/onions
- 1/2 tsp Worcestershire Sauce
- celery salt and pepper to taste
- GUAC:
- 1 1/2 Avocado
- 1 scallion - finely chopped
- 1/2 tsp lemon juice
- 1/2 tsp pepper
- 1 tsp salt
Paleo Fragrant Indian-Spiced Greens (Spinach and Kale)

Wash the spinach and greens well under cold running water
- 1 pound fresh spinach
- 1 pound leafy greens (mustard greens, collards, or kale)
- 4 tablespoons coconut oil (refined for medium-high heat)
- 1/2 large white onion, thinly sliced
- 1 teaspoon finely chopped garlic
- 2 green chili peppers, seeded and minced
- 1 cup chopped canned tomatoes
- 1 teaspoon ground cumin seed
- 1/2 teaspoon ground ginger
- Sea salt to taste (optional if strictly Paleo)
- 1 teaspoon garam masala
- 1/4 cup water
Paleo Turkey Kebabs

In a food processor, blend meat until ground
- 2 Lbs turkey breast, de boned, trimmed of most of the skin and cut into thin strips.
- 3 cloves of garlic
- 2 tbs olive oil
- 2 eggs
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp cayenne pepper(more or less depending)
- 3-5 tbs of chopped parsley
- 1-2 tbs of mint
